Mini meatball soup crockpot recipe
Ingredients needed:
* 2 teaspoons of olive oil
* 8 oz sliced fresh mushrooms
* 2 cloves of minced garlic
* 3 cups of sliced cabbage
* 2 cups of beef stock
* 2 cups of chicken stock
* 1 tablespoon of tomato paste
* 1/2 cup of long-grain rice
* 2 tablespoons of fat free milk
* 6 oz of lean ground beef
* 1 large egg
* 1/4 cup grated parmesan
* 1/2 teaspoon of dried oregano
* 3 tablespoons of chopped fresh flat-leaf parsley
* 1/2 cup of roasted red bell peppers, chopped
Preparation steps:
* Heat oil in large skillet over medium heat. Add mushrooms and cook, stirring for approximately 4 minutes. Stir in half of the garlic and cook for another minute. Transfer to crockpot and add cabbage, stocks, tomato paste and 2 cups of water.
* Mix rice and milk in bowl. Add beef, egg, cheese, oregano, 1 1/2 tbsp of the parsley and remaining garlic. Season with 3/4 teaspoon of black pepper and 1/2 teaspoon salt. Shape into mini meatballs, using a heaping teaspoon for each. Coat skillet used in step 1 with cooking spray and heat over medium heat. Brown meatballs, turning until golden (approximately 5 minutes). Transfer to crockpot
* Cover and cook on low for 5 hours or high for 2 1/2 hours. Add roasted peppers and remaining parsley.

Ingredients needed:
* 1 jar of red pepper jelly
* 1/2 cup of packed brown sugar
* 1/3 cup barbecue sauce
* 2 cans of pineapple chunks in juice, drained
* 2 packages of cocktail sizd smoked link sausages
* 1 tablespoon of cornstarch
* 2 tablespoons of water
Preparation step:
* Spray crockpot with cooking spray. In crockpot, mix pepper, jelly, brown sugar, barbecure sauce and pineapple. Stir in sausages.
* Cover and cook on low for 3 hours.
* In a small bowl, mix cornstarch and water until smooth. Gradually add cornstarch mixture to sausage mixture, stirring constantly Increase heat setting to high. Cook uncovered 1 hour longer or until glaze is thickened. Serve warm.

Greek penne pasta crockpot recipe
Ingredients needed:
* 2 2/3 cups uncooked penne pasta
* 1 lb ground beef round
* 1 large onion, chopped
* 1 box of Green Giant frozen chopped spinach, thawed, squeezed to drain
* 3/4 teaspoon of dried oregano leaves
* 1/2 teaspoon of salt
* 1/2 teaspoon of pepper
* 4 1/2 cups roasted garlic tomato pasta sauce
* 1 tablespoon of sugar
* 2 cups of crumbled feta cheese (8oz)
* 1 cup of shredded mozzarella cheese
* Thinly sliced fresh basil leaves, if desired
Preparation steps:
* Spray bottom of crockpot with cooking spray. Line side of crockpot with foil. Spray foil with cooking spray. Cook and drain pasta as directed on package, using minimum cooking time.
* In 12 inch skillet, cook beef and onion over medium heat for approximately 8 to 10 minutes stirring occasionally until beef is thoroughly cooked; drain. Stir in spinach, oregano, salt and pepper. In medium bowl, mix pasta sauce and sugar.
* In crockpot, spread 1 1/2 cups of the pasta sauce. Layer with half of the pasta, half of the beef mixture and 1 cup of the feta cheese. Repeat layers. Pour remaining 1 1/2 cups pasta sauce over top. Sprinkle with mozzarella cheese.
* Cover and cook on low for 3 hours. Let stand 10 minutes before serving. Garnish with basil.

* 3 pounds of boneless skinless chicken thighs
* 1 3/4 cups of buffalo wing sauce
* 1 seedless english cucumber
* 12 large sandwich buns
* 3/4 cup of crumbled blue cheese (approximately 3 oz)
Preparation steps:
* Spray crockpot with cooking spray. In crockpot, place chicken and 1 cup of buffalo wing sauce.
* Cover and cook on low for 7 1/2 hours
* Remove chicken from crockpot to medium sized bowl. Place strainer over another medium sized bowl. Carefully pour cooking liquid from crockpot through strainer; skim fat. Reserve 1 1/2 cups of liquid. Stir chicken to separate into pieces. Return chicken to crockpot; stir in reserved liquid.
* Increase heat setting to high. Cover and cook about 15 minutes.
* Cut cucumber in half crosswise. With vegetable peeler, cut 1 strip of peel lengthwise from 1 cucumber half; discard strip that is mostly peel. Continue cutting thin strips lengthwise from cucumber, making about 18 strips. Repeat with other half of cucumber.
* Fill each bun with 1/2 cup chicken mixture, about 3 strips of cucumber, 1 tablespoon of the remaining buffalo wing sauce and 1 table spoon of cheese.

Ingredients needed:
* 3 whole boneless, skinless chicken breasts
* 3 large swiss cheese slices, halved
* 3 large, thin ham slices, halved
* 2 tablespoons of butter
* 1 can of either cream of mushroom soup or cream of chicken soup
(I acually prefer the cream of chicken)
* 3 tablespoons of milk
* 1/4 teaspoon of pepper
Preparation steps:
* Cut whole breasts in half. Flatten each half with wooden mallet. Cover each half breast with half slice of cheese and ham. Roll up and secure with toothpicks. Brown each chicken roll in butter in skillet. Transfer to crockpot.
* Combine remaining ingredients. pour over chicken, making sure chicken pieces are fully covered.
* Cover and look on low for 4 to 5 hours.

* 3 tablespoons of finely chopped onion
* 1/2 teaspoon of salt
* shredded cheese is optional

* Combine first 8 ingredients into greased crockpot
* Cover and cook on high for 1 hour. Reduce heat to low. Cover and cook on for 2 1/2 hours.
* Sprinkle with cheese if you wish and serve.
Makes an awesome breakfast dish.

Ingredients needed:
* 3 tablespoons of vegetable oil
* 3 tablespoons of whole wheat flour
* 1 cup of onion, chopped
* 2 ribs of celery, chopped
* 1 medium green bell pepper, chopped
* 4 cloves of garlic, minced
* 1/2 teaspoon of dried thyme
* 1/8 teaspoon of cayenne
* 12 oz turkey breast cutlets, cut into 1/2" pieces
* 2 cups of reduced sodium chicken broth
* 1 can of no-salt added diced tomatoes
* 1 cup of frozen cut okra
* 4 oz turkey kielbasa, thinly sliced
* 1 dried bay leaf
* 2 cups of cooked brown rice
Preparation steps:
* Heat oil in medium cast-iron skillet over medium high heat. Add flour and whisk to combine well. Reduce heat to medium and whisk until color is golden brown (approximately 8 to 10 minutes). Add onion, celery, bell pepper, garlic, thyme, cayenne, and 1/4 teaspoon each salt and black pepper. Cook, stirring, until vegetables are softened, about 5 minutes.
* Transfer to crockpot coated with cooking spray. Add turkey, broth, tomatoes (with juice), okra, kielbasa, and bay leaf. Cover and cook until turkey is tender (approximately 3 to 4 hours).
* Discard bay leaf. Season gumbo to taste and serve over rice.

* 2 1/2 cups of cooked rice
* 1 1/2 cups of evaporated milk
* 2/3 cup of brown sugar
* 3 tablespoons of soft butter
* 2 teaspoons of vanilla
* 1 teaspoon of nutmeg
* 3 eggs, beaten
* 1 cup of raisins
Preparation steps:
* Mix together all ingredients. Pour into lightly greased crockpot.
* Cover and cook on high for 2 hours or low for 5 hours.
* Serve (You can serve either warm or cold- both ways taste great)

* 8 oz cremini mushrooms, stemmed and sliced
* 1/3 cup dry marsala wine
* 1/3 cup reduced sodium chicken broth
* 1/4 cup chopped fresh parsley
Preparation steps:
* Season chicken with salt and pepper. Put flour in shallow bowl. Coat chicken evenly with flour, shaking off excess
* Heat 2 tablespoons of the oil in large skillet (preferably cast iron) over medium heat. Add chicken, working in batches and cook, turning until golden brown (about 2 minutes per side). Transfer to crockpot coated with cooking spray.
* Add remaining 1 tablespoon oil to skillet. Cook prosciutto until it starts to become crisp (about 1 to 2 minutes). Drain on paper towels and chill. Add mushrooms to skillet and cook until golden, 5 minutes.
* Stir in wine and broth, scraping up any browned bits stuck to the bottom of the pan. Pour over chicken. Cover and cook until chicken is tender and cooked thoroughly for about 4 hours on low. Season to taste, top with reserved prosciutto and sprinkle with parsley.

Corned beef and cabbage crockpot recipe
Corned beef and cabbage crockpot recipe
Ingredients needed:
3 carrots cut in 3" pieces
3-4 pound of corned beef brisket
2-3 medium onions, quartered
1 cup of water
Half a small head of cabbage, cut into wedges
Preparation needed:
Layer all ingredients except cabbage into crockpot
Cover. Cook on low for 9 hours or high for 5 hours.
Add cabbage wedges to liquid, pushing down to moisten. Turn to high and cook an additional 2 hours
Also you can add 4 medium potatoes halved, with the onions.
Top individual servings with mixture of sour cream and horseradish.

Cheese potatoes in crockpot
Ingredients needed:
* 2-lb package of frozen hash browns
* 10 3/4 oz. can of cream of mushroom soup
* 10 3/4 oz. can of potato soup
* 8 oz. (2 cups) shredded cheddar cheese
* 1 cup grated parmesan cheese
* 1 pint of sour cream
Preparation steps:
* Mix together all ingredients in crockpot
* Cover and cook on low for 7 hours

* 1 large onion, chopped
* 2 carrots, thinly sliced

* 1 can of tomatoes (12 oz)
* 1/2 teaspoon of salt
* 3 cans of clams with liquid (8 oz cans)
* 2 whold peppercorns
* 1 bay leaf
* 1 1/2 teaspoon of dried crushed thyme
* 3 medium potatoes, cubed
Preparation steps:
* Combine all ingredients in crockpot
* Cover and cook on low for 8 to 9 hours
