Jamaican Country Ribs Crockpot Recipe
Ingredients needed:
* 1 large onion, sliced
* 4 cloves garlic, sliced
* 6 bone-in country ribs (about 3 lbs)
* 2 tablespoons jerk seasoning (such as McCormick)
* 1 can of pineapple chunks in juice (approximately 20 oz.)
* 1 large green pepper, seeded and sliced
* 1 tablespoon all-purpose flour
* 1 can of black beans, drained and rinsed (15 oz.)
* 4 cups of cooked brown rice
* 4 scallions, sliced
Preparation steps:
* Coat crockpot with nonstick cooking spray.
* Place onion and garlic in bottom of crockpot.
* Season ribs with 1 tablespoon of the jerk seasoning and place over onion and garlic.
* Drain pineapple, reserving 3/4 cup of the juice, and scatter over ribs. Add green pepper.
* Combine reserved pineapple juice, flour and remaining 1 tablespoon of jerk seasoning. Pour over ribs.
* Cover and cook on high for 6 hours or low for 8 hours.
* Stir in beans during last 30 minutes of cooking time.
* Serve with brown rice and garnish with scallions.

Cheeseburger Bites Crockpot Recipe
Cheeseburger Bites Crockpot Recipe
Ingredients needed:
* 1 lb. lean ground beef
* 2 tablespoons of ketchup
* 2 teaspoons of instant minced onion
* 1 teaspoon of yellow mustard
* 8 oz. American cheese loaf, cut into 2-inch cubes (approximately 2 cups)
* 24 miniature burger buns, split
Toppings, as desired:
* Dill pickle chips
* Sliced plum tomatoes
* Shredded lettuce
* Ketchup and mustard
Preparation steps:
* In skillet, cook beef over medium-high heat for about 7 minutes, stirring frequently, until thoroughly cooked; drain. Stir in 2 tablespoons ketchup, the onion and 1 teaspoon mustard.
* Spray crockpot with cooking spray. Spoon beef mixture into crockpot. Top with cheese.
* Cover and cook on low for 3 1/2 hours.
* Serve with desired toppings.

* 1 jar of Dijon mustard (approximately 8 oz)
* 1 can of pineapple tidbits in juice, undrained
* 1/2 cup of packed dark brown sugar
* 1 teaspoon of curry powder
* 2 1/2 pounds of frozen cooked Italian-style meatballs (about 80 meatballs)
Preparation steps:
* In small saucepan, mix all ingredients except meatballs. Heat to boiling.
* Place meatballs into crockpot. Stir in mixture from step 1.
* Cover and cook on high for 4 hours. Stir well after 2 hours.
* Just before serving, stir again to coat meatballs with sauce.

* 4 turkey thighs (about 3 lbs.), skin removed
* 1/2 cup of packed brown sugar
* 1/4 cup of yellow mustard
* 2 tablespoons of ketchup
* 2 tablespoons of cider vinegar
* 2 tablespoons of Louisiana-style hot pepper sauce
* 1 teaspoon of salt
* 1 teaspoon of coarse ground black pepper
* 1 teaspoon of crushed red pepper flakes
* 2 teaspoons of liquid smoke
* 12 burger buns, split
* 1/2 pint of creamy coleslaw (from deli)
Preparation steps:
* Spray crockpot with cooking spray.
* Place turkey thighs in crockpot.
* In a small bowl, mix remaining ingredients except buns and coleslaw. Pour over turkey, turning turkey as necessary to coat.
* Cover and cook on low for 9 hours.
* Remove turkey from crockpot; place on cutting board. Remove meat from bones; discard bones. Shred turkey with 2 forks; return to crockpot and mix well.
* To serve, spoon about 1/3 cup turkey mixture onto bottom halves of buns (with slotted spoon). Top each with rounded tablespoon of coleslaw. Cover with top halve of buns.

* 1/2 cup of low-sodium beef broth
Preparation steps:
* Season stew meat with salt and pepper and place into crockpot. Add onion, green chiles, and bacon.

* 1 cup of dried wild mushrooms, broken into pieces

* 1/2 teaspoon of dried thyme
* 5 cups of vegetable broth
Preparation steps:
* Heat oil in medium skillet over medium heat. Add onion, carrots and garlic; cook and stir for about 5 minutes or until tender.
* Place into crockpot.

* 4 large garlic cloves, halved
* 1 3/4 pounds boneless beef leg, trimmed of fat and cut into large chunks
* 4 bay leaves
* 3 cinnamon sticks
* 1/4 teaspoon ground cloves
* 1/4 teaspoon of ground nutmeg
* 2 tablespoons of red wine vinegar
* 1 pound tomatoes, grated and skins discarded
* 4 tablespoons of tomato paste
* A pinch of sugar
* Salt and freshly ground black pepper
* Chopped mint or cilantro leaves, to serve
* Boiled potatoes, to serve
Preparation steps:
* Heat 2 tablespoons of the oil in a large skillet over high heat. Lower the heat to medium, add the shallots and fry, stirring, 3 to 5 minutes until just starting to turn golden. Add the garlic and stir 1 to 2 minutes longer. Use a slotted spoon to transfer the shallots and garlic to the crockpot.
* Heat the remaining oil in the pan. Add the beef and fry 3 to 5 minutes until brown on all sides, working in batches to avoid overcrowding the pan and adding extra oil, if necessary. Transfer the beef to the crockpot as it browns.
* Just before the final batch of beef finishes browning, add the bay leaves, cinnamon sticks, cloves and nutmeg and stir for about 30 seconds until fragrant. Add the vinegar and tomatoes and stir until the vinegar evaporates.
* Transfer the beef mixture to the crockpot. Put the tomato paste and 4 tablespoons water in a small bowl and stir until dissolved, then stir in the beef mixture. Stir in the sugar and season with salt and pepper. The beef and onions will not be completely covered with liquid.

* 2 medium stalks of celery, cut into 1/2 inch slices
* 1 bag of frozen mixed vegetables (approximately 1 lb)
* 6 large frozen flaky biscuits
Preparation steps:
* Spray crockpot with cooking spray. Place chicken in crockpot. Top with onion, poultry seasoning, thyme, pepper, gravy and celery.
* Cover; cook on low for 8 to 10 hours.
* Gently stir frozen vegetables into chicken mixture. Increase heat to high. Cover and cook for 30 minutes longer.

* 1 can of sweet potatoes, drained (approximately 40 ounces)
* 2 small onions, sliced
* 2 apples, cored and sliced
* 1/2 cup of beef broth
* 2 cloves of garlic, minced
* 1 teaspoon of salt
* 1 teaspoon dried thyme, divided
* 3/4 teaspoon of black pepper
* 1 tablespoon of cornstarch
* 1/4 teaspoon of ground cinnamon
* 2 tablespoons of cold water
Preparation steps:
* Trim excess fat from beef and discard. Cut beef into 2-inch pieces. Place beef, sweet potatoes, onions, apples broth, garlic, salt, 1/2 teaspoon thyme and 1/2 teaspoon of pepper into crockpot.
* Cover and cook on low for 8 to 9 hours.
* Transfer beef, sweet potatoes and apples to platter; cover with foil to keep warm. Let cooking liquid stand for 5 minutes to allow fat to rise. Skim off fat and discard.
* Stir together cornstarch, remaining 1/2 teaspoon thyme, remaining 1/4 teaspoon pepper, cinnamon and water until smooth; stir into cooking liquid. Cook for 15 minutes on high or until cooking liquid is thickened. Serve sauce over beef, sweet potatoes and apples.

* 2 tablespoons of olive oil
* 2 cloves of garlic, minced
* 1/2 teaspoon cracked black peppercorns
* 3 cups of tomato sauce
Ingredients needed for filling:
* 2 cups of ricotta cheese
* 1/2 cup of freshly grated Parmesan cheese
* 1 1/2 cups of chopped baby spinach
* 1 teaspoon of freshly grated nutmeg
* 1 egg, beaten
* 1/4 teaspoon of salt
* 1/4 teaspoon of freshly ground pepper
* 24 oven-ready cannelloni shells

* 2 cans of stewed tomatoes with Italian seasonings, undrained (approximately 14 ounces each)
* 2 cups of beef broth
* 1 cup of sliced mushrooms
* 1 small onion, chopped
* 1 tablespoon of tomato paste
* 1/4 teaspoon of salt
* 1/4 teaspoon of black pepper
* 1/2 pound turkey spicy Italian sausage, casings removed
* Shredded mozzarella cheese
Preparation steps:
* Combine tomatoes with juice, broth, mushrooms, onion, tomato paste, salt and pepper into crockpot.
* Shape sausage into marble-size balls. Gently stir in soup mixture. Cover; cook on low for 6 1/2 hours.

* 2 leeks, cleaned and finely chopped
* 2 carrots, peeled and diced
* 2 stalks of celery, diced
* 2 cloves of garlic, minced
* 1 tablespoon of dried tarragon
* 1 teaspoon of salt
* 1 teaspoon of cracked black peppercorns
* 1/4 cup of all-purpose flour
* 1/2 cup of dry white wine
* 2 cups of chicken broth
* 8 oz. of mushrooms, trimmed and quartered
* 4 cups of cubed skinless boneless turkey (or you can substitute chicken breasts)
* 2 cups of sweet green peas
* 1/2 cup of heavy or whipping cream
Topping ingredients needed:
* 3/4 cup of whole wheat flour
* 3/4 cup of all-purpose flour
* 1/2 teaspoon of salt
* 2 teaspoons of baking soda
* 3/4 cup of buttermilk
* 2 tablespoons of olive oil
Preparation steps:
* In a skillet, heat oil over medium heat. Add leeks, carrots and celery and cook, stirring, until softened, about 5 minutes. Add garlic, tarragon, salt and peppercorns and cook for about another minute. Add flour and cook, stirring, for 1 minute. Add wine and broth and cook, stirring, until mixture comes to a boil and thickens, about 5 minutes.

* 1 boneless pork shoulder butt roast (approximately 3 lbs)
* 2 tablespoons of steak seasoning

* 1 half-pint jar or 1 cup red currant jelly
* 3 tablespoons of minced chipotle peppers in adobo sauce
* 10 Kaiser rolls, split

* Cut roast in half. Place in crockpot; sprinkle with steak seasoning. Add water.
* Cover and cook on low for 8 to 10 hours.
* In a small saucepan, combine jelly and peppers. Cook over medium heat for 5 minutes or until heated through.
* Remove meat from crockpot; discard cooking liquid.
* Shred pork with two forks.
* Return to the crockpot; top with jelly mixture.
* Cover and cook on low for 30 more minutes.

* 1 cup of chopped yellow onion
* 1 cup of chopped celery
* 1 cup of grated peeled sweet potato
* 1 cup of reduced-sodium vegetable broth
* 2 slices of bacon, crisply cooked and crumbled
* 1 cup of fat-free half-and-half
* 1/4 cup of minced fresh parsley
* Black pepper to taste
Preparation steps:
* Place onion, celery, sweet potato, broth and bacon into crockpot. Cover and cook on low for 6 hours.
* Increase heat to high. Add half-and-half, using just enough to bring stew to desired consistency. Cook on high for 30 minutes.
* Season to taste with pepper. Stir in parsley.

* Canola oil cooking spray
* 3 bags of seasoned stuffing mix (6 ounces each)
* 1 can of reduced-sodium chicken broth
* 1 1/2 cups frozen chopped onions
* 1 cup of chopped celery
* 1 cup of melted butter
* 3/4 cup of chopped walnuts
* 1/2 cup of crumbled cooked bacon
* 1 can of whole cranberry sauce
Preparation steps:
* Coat crockpot with cooking spray; set aside. In a large bowl, toss together stuffing mix, chicken broth, onions, celery, melted butter, walnuts, and bacon until combined. Fold in cranberry sauce. Pour into crockpot.
* Cover and cook on high for 1 hour. Switch to low and cook an additional 3 hours.
Serve and enjoy.

* 2 Cubanelle peppers, seeds removed, sliced
* 1 red sweet pepper, seeds removed, sliced
* 1 sweet onion, sliced
* 1 package of white mushrooms, quartered (approximately 10 oz)
* 1/2 cup of beef broth
* 2 tablespoons of red wine vinegar
* 1 tablespoon of Worcestershire sauce
* 1 tablespoon of brown sugar
* Fresh basil leaves
Preparation steps:
* Coat crockpot with nonstick cooking spray
* Season both sides of steaks with Italian seasoning, salt and pepper. Place in crockpot. Scatter Cubanelle peppers, red pepper, onion and mushrooms over top. In a small bowl, combine broth, vinegar, Worcestershire sauce and brown sugar. Pour over peppers, onions and mushrooms.
