Pizza in a Pot Crockpot Recipe
Ingredients needed:
* 1 1/2 lbs. ground beef
* 1 medium green pepper, chopped
* 1 medium onion, chopped
* 1 can of tomato sauce (15 oz.)
* 1 jar of pizza sauce (14 oz.)
* 2 tablespoons of tomato paste
* 3 cups of spiral pasta (cooked and drained)
* 2 packages of sliced pepperoni (3 1/2 oz. each)
* 2 cups of shredded part-skim mozzarella cheese
Preparation steps:
* In a large skillet, cook the beef, green pepper and onion over medium heat until meat is no longer pink; drain. Stir in the tomato sauce, pizza sauce and tomato paste.
* In crockpot, layer the pasta, beef mixture, pepperoni and cheese. Cover and cook on low for 3 1/2 hours or until heated through.

Since I probably use my crockpot more than I use my oven, I thought a blog for tasty and easy crockpot recipes would be great. I simply love my crockpot and am known as the queen of the crockpot. When you work 40 hours a week and have children with a lot of after school activities, the crockpot really simplifies life. So much healthier than fast food too :-). Buffalo Chicken Lasagna Crockpot Recipe
Buffalo Chicken Lasagna Crockpot Recipe
Ingredients needed:
* 1 1/2 lbs. ground chicken
* 1 tablespoon of olive oil
* 1 bottle of Buffalo wing sauce
* 1 1/2 cups meatless spaghetti sauce
* 1 carton of ricotta cheese (15 oz.)
* 2 cups of shredded part-skim mozzarella cheese
* 9 no-cook lasagna noodles
* 2 medium sweet red peppers, chopped
* 1/2 cup of crumbled blue cheese or feta cheese
* Chopped celery and additional crumbled blue cheese, optional
Preparation steps:
* In a Dutch oven, cook chicken in oil over medium heat until no longer pink; drain. Stir in wing sauce and spaghetti sauce. In a small bowl, mix ricotta and mozzarella cheeses.
* Spread 1 cup sauce onto the bottom of crockpot. Layer with three noodles (breaking noodles to fit), 1 cup sauce, a third of the peppers and third of the cheese mixture. Repeat layers twice. Top with remaining sauce; sprinkle with blue cheese.
* Cover and cook on low for 4 to 5 hours or until noodles are tender. Let stand 15 minutes before serving. Top with celery and additional blue cheese if desired.

* 6 bone-in pork loin chops (7 oz. each)
* 1 tablespoon of canola oil
* 2 large onions, sliced and separated into rings
* 2 teaspoons of butter
* 3 tablespoons of all-purpose flour
* 1/4 teaspoon of salt
* 1/4 teaspoon of pepper
* 1 can of reduced-sodium chicken broth
* 1 cup of fat-free milk
Preparation steps:
* Place potatoes into crockpot coated with cooking spray. In a large nonstick skillet, brown pork chops in oil in batches.
* Place chops over potatoes. Saute onions in drippings until tender; place over chops. Melt butter in skillet. Combine the flour, salt, pepper and broth until smooth. Stir into pan. Add milk. Bring to a boil; cook and stir for 2 minutes or until thickened.
* Pour sauce over onions. Cover and cook on low for 8 to 10 hours or until pork is tender. Skim fat and thicken cooking juices if desired.

Mexican Chicken Crockpot Recipe
Ingredients needed:
* 2 to 4 boneless, skinless chicken breasts
* 1 medium onion, sliced
* 1 can of cream of chicken soup, undiluted
* 1 can of Mexican-style diced tomatoes with mild green chiles
* 1 package of pasteurized process cheese product, cubed
* Hot cooked spaghetti
Preparation steps:
* Place chicken, onion, soup and tomatoes into crockpot. Cover and cook on low for 7 hours.
* Break up chicken into pieces. Add cheese product. Cover; cook on High for 10 minutes or until cheese product is melted.
* Serve over spaghetti.

* Cover and cook on low for 7 hours or on high for 4 hours.

* 1 jar of roasted eggplant flavor marinara pasta sauce
Preparation steps:
* Peel eggplants and slice horizontally into 3/4-inch-thick pieces. Place flour in shallow bowl. Dredge each slice of eggplant in flour to coat.
* Heat oil in large skillet over medium-high heat. In batches, lightly brown eggplant on both sides.
* Pour thin layer of garlic pasta sauce into the bottom of the crockpot. Top with eggplant slices, Italian seasoning, manchego cheese and marinara pasta sauce. Repeat layers until all ingredients have been used.
* Cover and cook on high for 2 hours.

* 1 cup of crumbled Gorgonzola
* 3 eggs
* 1/2 cup of cream
* 1 teaspoon of black pepper
* Paprika (optional)
Preparation steps:
* Coat inside of crockpot with nonstick cooking spray. Combine corn bread mix, spinach, cheese, eggs, cream and pepper into crockpot. Cover and cook on high for 1 1/2 hours.
* Sprinkle with paprika, if desired. Turn off heat. Let bread cool completely before inverting onto large serving platter.

* 6 slices of bacon, cut crosswise into 1/2-inch slices
* 1 flat-cut boneless beef brisket (about 2 1/2 pounds)
* Salt and black pepper
* 3 medium onions, sliced
* 2 cans of beef broth, undiluted
Preparations steps:
* Heat large skillet over medium heat. Add bacon; cook and stir until crisp. Remove to crockpot using slotted spoon.
* Season brisket with salt and pepper. Add to skillet; cook 6 minutes on each side or until browned. Remove to crockpot.
* Add onions; cook and stir for 3 to 5 minutes or until softened. Add to crockpot. Pour in broth. Cover and cook on high for 7 hours.
* Remove brisket to cutting board. Cover loosely with foil and let stand for 10 minutes. Slice brisket against the grain into thin slices. Season with salt and pepper, if desired. Spoon bacon, onions and cooking liquid over brisket to serve.

* 1 package of uncooked three-cheese tortellini
* 3/4 cut grated Asiago or Romano cheese
* Chopped fresh Italian parsley (optional)
Preparation steps:
* Brown beef in a large skillet over medium-high heat for approximately 6 to 8 minutes, stirring to break up meat. Drain fat.
* Coat inside of crockpot with nonstick cooking spray. Stir pasta sauce and water into crockpot. Add mushrooms; stir to combine. Stir in meat, red pepper flakes, if desired, and tortellini. Cover and cook on low for 2 hours or on high for 1 hour. Stir.
