Wild Rice with Fruits and Nuts Crockpot Recipe
Ingredients needed:
* 2 cups of wild rice (or wild rice blend), rinsed
* 1/2 cup dried cranberries
* 1/2 cup chopped California sun-dried raisins
* 1/2 cup chopped dried apricots
* 1/2 cup almond slivers, toasted
* 5 to 6 cups of chicken broths
* 1 cup of orange juice
* 2 tablespoons of butter, melted
* 1 teaspoon of ground cumin
* 2 green onions, thinly sliced
* 2 to 3 tablespoons chopped fresh parsley
* Salt and black pepper, to taste
Preparation steps:
* Combine wild rice, cranberries, raisins, apricots and almonds into crockpot.
* Combine 5 cups of chicken broth, orange juice, butter and cumin in medium bowl. Pour mixture over rice; mix well.
* Cover and cook on low for 7 hours or on high for 3 hours. Stir once, adding more hot broth if necessary.
* When rice is soft to the bite, add green onions, parsley, salt and pepper.
* Cover and cook on low for 10 minutes longer.

Since I probably use my crockpot more than I use my oven, I thought a blog for tasty and easy crockpot recipes would be great. I simply love my crockpot and am known as the queen of the crockpot. Swiss Cheese Scalloped Potatoes Crockpot Recipe
Ingredients needed:
* 2 pounds of baking potatoes, peeled and thinly sliced
* 1/2 cup finely chopped yellow onion
* 1/4 teaspoon of salt
* 1/4 teaspoon of ground nutmeg
* 2 tablespoons butter, cut into small pieces
* 1/2 cup of milk
* 2 tablespoons of all-purpose flour
* 3 ounces Swiss cheese slices, torn into small pieces
* 1/4 cup finely chopped green onions, optional
Preparation steps:
* Layer half of the potatoes, 1/4 cup onion, 1/8 teaspoon salt, 1/8 teaspoon nutmeg and 1 tablespoon of butter into crockpot. Repeat layers.
* Cover and cook on low for 7 hours or on high for 3 1/2 hours.
* Remove potatoes with slotted spoon to serving dish and cover with foil to keep warm.
* Blend milk and flour in small bowl until smooth. Stir mixture into cooking liquid. Add cheese; stir to combine. Turn crockpot to high. Cover and cook on high for 10 minutes or until slightly thickened. Stir. Pour cheese mixture over potatoes and serve. Garnish with chopped green onions.

* 1/2 teaspoon of ground nutmeg
* 1/4 teaspoon of salt
* 16 slices cinnamon raisin bread, torn into small pieces
* 1/2 cup of whipping cream
* 2 tablespoons of bourbon (optional)
Preparation steps:
* Combine milk and 2 tablespoons butter in medium microwavable bowl. Microwave on high for 3 minutes or until very warm.
* Whisk 1/2 cup of brown sugar, pumpkin, eggs, cinnamon, vanilla, nutmeg and salt in large bowl until well blended. Whisk in milk mixture until blended. Add bread cubes; toss to coat.
* Coat inside of crockpot with nonstick cooking spray. Add bread mixture. Cover and cook on high for 2 hours or until knife inserted into center comes out clean. Turn off heat. Uncover; let stand for 15 minutes.

* 1 1/2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
* 1 cup of chicken broth
* 1 tablespoon of all-purpose flour (optional)

* 1 1/2 to 2 pounds of beef stew meat, cut into 1-inch cubes
* 2 tablespoons of all-purpose flour
* 1/2 teaspoon of salt
* 1/2 teaspoon of black pepper
* 1 1/2 cups of beef broth
* 1 teaspoon of Worcestershire sauce
* 1 clove of garlic, minced
* 1 bay leaf
* 1 teaspoon of paprika
* 4 shiitake mushrooms, sliced
* 2 medium carrots, sliced
* 2 medium red potatoes, diced
* 1 small white onion, chopped
* 1 stalk of celery, sliced
Preparation steps:

Ingredients needed:
* 2 1/4 pounds Yukon gold potatoes, peeled and quartered
* 4 slices of hickory-or-applewood smoked bacon
* 1 carton of cream cheese (10 ounces)
* 1 cup of shredded sharp cheddar cheese
* 1/2 cup of sour cream
* 1/4 cup of chopped green onions
* 1/4 teaspoon of garlic salt
* Potato chips, sweet peppers, green onions, or other desired dippers
Preparation steps:
* In a covered large saucepan, cook potatoes in enough boiling lightly salted water to cover for 20 minutes or until tender; drain.
* Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove bacon and drain on paper towels. Crumble bacon; reserve 1 tablespoon of the crumbled bacon for topping.

Ingredients needed:
* 1 pound of butternut squash, seeded, peeled, and cut into 1-inch pieces
* 1 pound of sweet potatoes, peeled and cut into 1-inch pieces
* 1 tablespoon of olive oil
* 1/4 cup of packed brown sugar
* 1 teaspoon of salt
* 1 teaspoon of ground cumin
* 1/2 teaspoon of ground black pepper
* 1/2 teaspoon of ground cinnamon
* 1/2 teaspoon of ground ginger
* 2 fresh poblano chile peppers, seeded and cut into bite-size strips (Tip: Chile peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. Wear plastic or rubber gloves)
* 2 small onions, cut into thin wedges
* 2 to 2 1/2 pound boneless pork shoulder roast
* 2/3 cup of chicken broth
* 1 tablespoon of snipped fresh Italian parsley (flat-leaf)
Preparation steps:
