Chicken Cacciatore Crockpot Recipe
Ingredients needed:
* 2 tablespoons of olive oil
* 8 bone-in chicken thighs, skin removed
* 1 medium onion, thinly sliced
* 1 red bell pepper, thinly sliced
* 12 black or green olives, pitted and chopped
* 4 cloves garlic, minced
* 1 teaspoon red-pepper flakes
* 1/2 cup of dry red wine
* 1 1/2 cup of reduced-sodium chicken broth
* 1 lb plum tomatoes, coarsely chopped
* 2 tablespoons chopped parsley
Preparation steps:
* Heat oil in large cast-iron skillet or saute pan over medium-high heat. Season chicken with salt and black pepper. Cook, turning, until browned on all sides, 8 to 10 minutes. Transfer to plate and set aside
* Reduce heat to medium and add onion, bell pepper, olives, garlic, and red-pepper flakes. Cook until softened, about 10 minutes. Pour in wine and simmer, stirring occasionally, until nearly evaporated, about 5 minutes. Transfer to crockpot coated with cooking spray. Add broth and tomatoes.
* Add chicken to crockpot, tucking into vegetables. Cover and cook until chicken is tender, 6 to 7 hours on low. Top with parsley.

Since I probably use my crockpot more than I use my oven, I thought a blog for tasty and easy crockpot recipes would be great. I simply love my crockpot and am known as the queen of the crockpot. When you work 40 hours a week and have children with a lot of after school activities, the crockpot really simplifies life. So much healthier than fast food too :-). Leftover turkey soup crockpot recipe
Do you ever think about how much turkey you actually throw away? Why not make a meal of it? This is a delicious and easy crockpot recipe for leftover turkey.
Ingredients:
* 1 small onion, chopped
* 1 cup of chopped celery
* 1 tablespoon of oil
* 2-3 cups diced turkey
* 1 cup of cooked rice
* 1 can of turkey gravy or chicken broth. You can also just use your leftover gravy.
* Carrots are optional. I like to add a bag of baby carrots to mine.
Preparation steps:
* Saute onion and celery in oil in saucepan.
* Combine all ingredients in crockpot, adding gravy or broth until it is the consistency that you crave.
* cover and cook on low for around 2 to 3 hours.
Serve and enjoy

BBQ Short Ribs Crockpot Recipe
Ingredients needed:
* 5 pounds of short ribs
* 1 large onion, chopped
* 2 cloves garlic, chopped
* 1 cup of ketchup
* 1 cup of unsalted beef broth
* 2 tablespoons of sugar
* 2 tablespoons of white vinegar
* 2 tablespoons of worcestershire sauce
* 1 teaspoon of dry mustard
* 1/4 teaspoon of black pepper
* Mashed potatoes and sauteed Swiss chard are optional but very tasty
Preparation steps:
* Spray crockpot with nonstick cooking spray. Place ribs in bottom of crockpot
* Scatter onion and garlic over ribs. Combine ketchup, broth, sugar, vinegar, worcestershire sauce, mustard and black pepper. Pour over ribs. Cover and cook on low for 10 hours.
I love to pour the ribs over some mashed potatoes and sprinkle with cheese :-)
