Pork Chops and Potatoes with Gravy Crockpot Recipe
Ingredients needed:
* Canola oil cooking spray
* 1 large onion, sliced
* 2 pounds of potatoes, thinly sliced
* 4 thick-cut boneless pork chops
* Salt and ground black pepper
* 1 can of cream of mushroom soup
* 1/2 cup dry sherry
* 2 teaspoons of chopped garlic
* 1 teaspoon dried sage
* 1 bay leaf
Preparation steps:
* Coat your crockpot with cooking spray. Place sliced onions in crockpot. Top with layers of potato slices. Sprinkle pork chops with salt and pepper to taste; place on top of potatoes in crockpot.
* In a medium sized bowl, whisk together mushroom soup, sherry, garlic, sage, and bay leaf until smooth. Pour over pork chops and potatoes in crockpot.
* Cover and cook on low for 5 to 6 hours.
* Remove and discard bay leaf. Serve pork chops with potatoes, onions, and cooking juices.

Since I probably use my crockpot more than I use my oven, I thought a blog for tasty and easy crockpot recipes would be great. I simply love my crockpot and am known as the queen of the crockpot. When you work 40 hours a week and have children with a lot of after school activities, the crockpot really simplifies life. So much healthier than fast food too :-). Spinach and Artichoke Dip Crockpot Recipe
Ingredients needed:
* Canola oil cooking spray
* 2 boxes of frozen spinach, thawed and squeezed dry. The packages should be 10 ounces each.
* 1 can quartered artichoke hearts, drained and chopped
* 1 can of white sauce
* 1 1/2 cups of shredded mozzarella cheese
* 1 package of cream cheese, cut into cubes. This should be an 8 ounce package.
* 1/2 cup of frozen chopped onions
* 1/2 cup of shredded parmesan cheese
* 2 teaspoons of chopped garlic
* 1/2 cup of sour cream
* Salt and ground black pepper
* Blue corn tortilla chips
Preparation steps:
* Coat your crockpot with cooking spray. In the crockpot, stir together spinach, artichoke hearts, white sauce, mozzarella cheese, cream cheese, onions, parmesan cheese, and garlic.
* Cover and cook on low for 3 hours, stirring once halfway through cooking, stir in sour cream. Season to taste with salt and pepper. Serve warm with tortilla chips.

Spicy Candied Sweet Potatoes Crockpot Recipe
Ingredients needed:
* Canola oil cooking spray
* 2 cans of cut sweet potatoes, drained
* 1/2 cup finely chopped pecans
* 6 tablespoons of butter, cut into small pieces
* 2 tablespoons of frozen orange juice concentrate, thawed
* 1/2 cup of packed brown sugar
* 2 teaspoons of pumpkin pie spice
* 1/4 teaspoon of cayenne pepper
* 3 cups of miniature marshmallows
Preparation steps:
* Coat a 5-quart crockpot with cooking spray. In a large bowl, stir together sweet potatoes, pecans, butter, and orange juice concentrate until combined. In a small bowl, stir together brown sugar, pumpkin pie spice, and cayenne pepper until combined. Sprinkle over sweet potato mixture; stir until combined. Spoon into crockpot.
* Cover and cook on low for 2 to 3 hours.
* Sprinkle marshmallows over top of sweet potatoes in crockpot. Cover and cook on low for 15 minutes more or until marshmallows are melted.
