Chicken Cacciatore Crockpot Recipe



Ingredients needed:

* 2 tablespoons of olive oil
* 8 bone-in chicken thighs, skin removed
* 1 medium onion, thinly sliced
* 1 red bell pepper, thinly sliced
* 12 black or green olives, pitted and chopped
* 4 cloves garlic, minced
* 1 teaspoon red-pepper flakes
* 1/2 cup of dry red wine
* 1 1/2 cup of reduced-sodium chicken broth
* 1 lb plum tomatoes, coarsely chopped
* 2 tablespoons chopped parsley

Preparation steps:

* Heat oil in large cast-iron skillet or saute pan over medium-high heat. Season chicken with salt and black pepper. Cook, turning, until browned on all sides, 8 to 10 minutes. Transfer to plate and set aside
* Reduce heat to medium and add onion, bell pepper, olives, garlic, and red-pepper flakes. Cook until softened, about 10 minutes. Pour in wine and simmer, stirring occasionally, until nearly evaporated, about 5 minutes. Transfer to crockpot coated with cooking spray. Add broth and tomatoes.
* Add chicken to crockpot, tucking into vegetables. Cover and cook until chicken is tender, 6 to 7 hours on low. Top with parsley.

Leftover turkey soup crockpot recipe



Do you ever think about how much turkey you actually throw away? Why not make a meal of it? This is a delicious and easy crockpot recipe for leftover turkey.

Ingredients:

* 1 small onion, chopped
* 1 cup of chopped celery
* 1 tablespoon of oil
* 2-3 cups diced turkey
* 1 cup of cooked rice
* 1 can of turkey gravy or chicken broth. You can also just use your leftover gravy.
* Carrots are optional. I like to add a bag of baby carrots to mine.

Preparation steps:

* Saute onion and celery in oil in saucepan.
* Combine all ingredients in crockpot, adding gravy or broth until it is the consistency that you crave.
* cover and cook on low for around 2 to 3 hours.

BBQ Short Ribs Crockpot Recipe



Ingredients needed:

* 5 pounds of short ribs
* 1 large onion, chopped
* 2 cloves garlic, chopped
* 1 cup of ketchup
* 1 cup of unsalted beef broth
* 2 tablespoons of sugar
* 2 tablespoons of white vinegar
* 2 tablespoons of worcestershire sauce
* 1 teaspoon of dry mustard
* 1/4 teaspoon of black pepper
* Mashed potatoes and sauteed Swiss chard are optional but very tasty

Preparation steps:

* Spray crockpot with nonstick cooking spray. Place ribs in bottom of crockpot
* Scatter onion and garlic over ribs. Combine ketchup, broth, sugar, vinegar, worcestershire sauce, mustard and black pepper. Pour over ribs. Cover and cook on low for 10 hours.

I love to pour the ribs over some mashed potatoes and sprinkle with cheese :-)

Mini meatball soup crockpot recipe



Ingredients needed:

* 2 teaspoons of olive oil
* 8 oz sliced fresh mushrooms
* 2 cloves of minced garlic
* 3 cups of sliced cabbage
* 2 cups of beef stock
* 2 cups of chicken stock
* 1 tablespoon of tomato paste
* 1/2 cup of long-grain rice
* 2 tablespoons of fat free milk
* 6 oz of lean ground beef
* 1 large egg
* 1/4 cup grated parmesan
* 1/2 teaspoon of dried oregano
* 3 tablespoons of chopped fresh flat-leaf parsley
* 1/2 cup of roasted red bell peppers, chopped

Preparation steps:

* Heat oil in large skillet over medium heat. Add mushrooms and cook, stirring for approximately 4 minutes. Stir in half of the garlic and cook for another minute. Transfer to crockpot and add cabbage, stocks, tomato paste and 2 cups of water.
* Mix rice and milk in bowl. Add beef, egg, cheese, oregano, 1 1/2 tbsp of the parsley and remaining garlic. Season with 3/4 teaspoon of black pepper and 1/2 teaspoon salt. Shape into mini meatballs, using a heaping teaspoon for each. Coat skillet used in step 1 with cooking spray and heat over medium heat. Brown meatballs, turning until golden (approximately 5 minutes). Transfer to crockpot
* Cover and cook on low for 5 hours or high for 2 1/2 hours. Add roasted peppers and remaining parsley.

Pineapple-glazed cocktail sausages



Ingredients needed:

* 1 jar of red pepper jelly
* 1/2 cup of packed brown sugar
* 1/3 cup barbecue sauce
* 2 cans of pineapple chunks in juice, drained
* 2 packages of cocktail sizd smoked link sausages
* 1 tablespoon of cornstarch
* 2 tablespoons of water

Preparation step:

* Spray crockpot with cooking spray. In crockpot, mix pepper, jelly, brown sugar, barbecure sauce and pineapple. Stir in sausages.
* Cover and cook on low for 3 hours.
* In a small bowl, mix cornstarch and water until smooth. Gradually add cornstarch mixture to sausage mixture, stirring constantly Increase heat setting to high. Cook uncovered 1 hour longer or until glaze is thickened. Serve warm.

Ingredients needed:

* 1 can of Old El Paso refried beans
* 1 Can of Progresso black beans, drained and rinsed
* 1 can of green giant steamcrisp mexicorn whole kernel corn, red and green peppers, drained
* 1 cup of old El paso thick and chunky salsa
* 2 chipotle chiles in adobo sauce, chopped
* 2 teaspoons of adobo sauce
* 1 1/2 cups shredded american cheddar cheese
* 4 medium green onions, chopped
* tortilla chips

Preparation steps:

* Spray crockpot with cooking spray. In crockpot, mix refried beans, black beans, corn, salsa, chiles, adobo sauce and 1 cup of the cheese.
* Cover and cook on low for 3 to 4 hours.
* Sprinkle remaining 1/2 cup of cheese and the onions over dip. Serve with tortilla chips.

Greek penne pasta crockpot recipe



Ingredients needed:

* 2 2/3 cups uncooked penne pasta
* 1 lb ground beef round
* 1 large onion, chopped
* 1 box of Green Giant frozen chopped spinach, thawed, squeezed to drain
* 3/4 teaspoon of dried oregano leaves
* 1/2 teaspoon of salt
* 1/2 teaspoon of pepper
* 4 1/2 cups roasted garlic tomato pasta sauce
* 1 tablespoon of sugar
* 2 cups of crumbled feta cheese (8oz)
* 1 cup of shredded mozzarella cheese
* Thinly sliced fresh basil leaves, if desired

Preparation steps:

* Spray bottom of crockpot with cooking spray. Line side of crockpot with foil. Spray foil with cooking spray. Cook and drain pasta as directed on package, using minimum cooking time.
* In 12 inch skillet, cook beef and onion over medium heat for approximately 8 to 10 minutes stirring occasionally until beef is thoroughly cooked; drain. Stir in spinach, oregano, salt and pepper. In medium bowl, mix pasta sauce and sugar.
* In crockpot, spread 1 1/2 cups of the pasta sauce. Layer with half of the pasta, half of the beef mixture and 1 cup of the feta cheese. Repeat layers. Pour remaining 1 1/2 cups pasta sauce over top. Sprinkle with mozzarella cheese.
* Cover and cook on low for 3 hours. Let stand 10 minutes before serving. Garnish with basil.
