S'mores Fondue Crockpot Recipe
Ingredients needed:
* 4 ounces of semisweet chocolate chips
* 1/2 jar of marshmallow crème (about 3 ounces)
* 3 tablespoons half-and-half
* 1/2 teaspoon of vanilla
* 1/2 cup of mini marshmallows
* Bananas, strawberries, chocolate covered pretzels, graham crackers and sliced apples
Preparation steps:
* Combine chocolate chips, marshmallow crème and half-and-half in medium saucepan over medium heat. Cook for 2 minutes or until melted and smooth, stirring constantly. Remove from heat. Stir in vanilla.
* Coat crockpot with nonstick cooking spray. Fill with warm fondue. Sprinkle with marshmallows and serve with fruit, pretzels and graham crackers.

Since I probably use my crockpot more than I use my oven, I thought a blog for tasty and easy crockpot recipes would be great. I simply love my crockpot and am known as the queen of the crockpot. When you work 40 hours a week and have children with a lot of after school activities, the crockpot really simplifies life. So much healthier than fast food too :-). Salsa and Goat Cheese Dip Crockpot Recipe
Ingredients needed:
* 1 1/4 cups of salsa
* 2 ounces of goat cheese crumbles
* 2 tablespoons of coarsely chopped fresh cilantro
* Tortilla chips
Preparation steps:
* Bring salsa to a boil in medium saucepan over medium heat. Remove from heat and cool slightly.
* Coat crockpot with nonstick cooking spray. Fill with heated salsa. Sprinkle with goat cheese and cilantro. Do not stir.
Serve with tortilla chips and enjoy!

Stuffed Baby Bell Peppers Crockpot Recipe
Ingredients needed:
* 1 tablespoon of extra-virgin olive oil
* 1/2 medium onion, chopped
* 1/2 pound ground beef, chicken or turkey
* 1/2 cup of cooked white rice
* 1 tablespoon of dried dill weed
* 3 tablespoons of chopped fresh parsley
* 1 tablespoon of tomato paste, divided
* 2 tablespoons of lemon juice
* 1/8 teaspoon of black pepper
* 1/2 teaspoon of salt
* 1 bag of yellow and red baby bell peppers (16 to 18 peppers)
* 1/4 cup of vegetable, chicken or beef broth
Preparation steps:
* Heat oil in medium skillet over medium heat. Add onion and cook, stirring occasionally, until translucent.
* Add ground meat and cook, stirring to break up meat, until cooked through and lightly browned. Drain meat and transfer to a large bowl. Add rice, dill weed, parsley, 1 1/2 teaspoons of tomato paste, lemon juice, pepper and salt. Mix well until combined. Set aside.
* Cut a small slit in the side of each baby bell pepper and run under cold water to wash out seeds. Fill each pepper with 2 to 3 teaspoons of seasoned meat. Place peppers into crockpot, slit side up. Add broth and remaining tomato paste.
* Cover and cook on low for 5 hour or on high for 2 1/2 hours.
Serve hot and enjoy

* 1 piece gingerroot, peeled and sliced (1 inch)
* 2 tablespoons of rice vinegar
* 2 tablespoons of soy sauce
* 2 teaspoons of honey
* 1/4 to 1/2 teaspoon crushed red pepper flakes
* 1/2 teaspoon of salt
* 1/4 teaspoon of pepper
* 4 cups of vegetable broth
* 1 cup half-and-half
* Chopped fresh cilantro leaves
Preparation steps:
* Spray crockpot with cooking spray. In crockpot, place all ingredients except half-and-half and cilantro; stir well.
* Cover and cook on low for 8 1/2 hours or until carrots are very tender.
* Carefully ladle 4 1/2 cups soup mixture into blender. Cover; blend on low speed until smooth. Transfer to a large bowl. Repeat with the remaining soup mixture. Return soup to the crockpot. Stir in 1/2 cup of the half-and-half. Increase heat to high. Cover and cook for 20 minutes longer.

* Season chicken with salt and pepper. Place chicken into crockpot. Top each chicken breast with cheese slice. Pour in soup and broth.
* Sprinkle stuffing mix over top; pour melted butter over all in crockpot.
* Cover and cook on low for 7 hours or on high for 3 1/2 hours.

* 1 1/2 cups of shredded extra-sharp Cheddar cheese (6 oz.)
* 1 cup of shredded Parmesan cheese (4 oz.)
* Additional shredded extra-sharp Cheddar cheese, if desired

* 2 dried bay leaves
* 1 teaspoon of dried thyme leaves

* 1/2 teaspoon of pepper
* 1 bag of fresh baby spinach leaves (6 oz.)
Preparation steps:

* 3/4 teaspoon of salt
* 1 tablespoon of olive oil
* 1 1/2 cups of chicken broth
* 2 1/2 cups of coarsely chopped onions
* 1 cup of pitted dried plums
* 1/4 cup of honey
* 2 tablespoons of tomato paste
* 3 medium carrots, cut diagonally into 1-inch slices
* Fresh cilantro leaves, if desired
* Toasted sliced almonds, if desired
Preparations steps:
* Spray crockpot with cooking spray. Sprinkle lamb with 1/2 teaspoon of the cumin, the turmeric and salt. In a 12-inch skillet, heat oil over medium heat. Add half of the lamb; cook for 6 minutes, stirring occasionally, until browned on all sides. Remove lamb with slotted spoon; place into crockpot. Repeat with the remaining lamb.
* Discard any remaining drippings from skillet, leaving brown particles in skillet. Add 1/2 cup of the broth to skillet, scraping to loosen particles; cook for 1 minute. Pour into crockpot. Stir in remaining 1/2 teaspoon of cumin, remaining 1 cup of broth, the onions, plums, honey, tomato paste and carrots.

* 1 medium sweet red pepper, chopped

* 1 can of water-packed artichoke hearts, rinsed and drained (14 oz.)
* 1 1/2 cups of chardonnay
* 1 can of tomato paste (6 oz.)
* 3 garlic cloves, minced
* 2 tablespoons of minced fresh thyme or 2 teaspoons of dried thyme
* 1/4 cup of minced fresh parsley
* Hot cooked pasta
* Shredded Romano cheese
Preparation steps:
* Combine the paprika, salt, pepper and cayenne; sprinkle over the chicken. Place the chicken, mushrooms, red pepper, onion and artichokes into crockpot. In a small bowl, combine the chardonnay, tomato paste, garlic and thyme; pour over the vegetables.

* 1 cup of reduced-sodium soy sauce
* 1/4 cup of white wine or reduced-sodium chicken broth
* 1/4 cup of canola oil
* 3 tablespoons of sugar
* 2 garlic cloves, minced
* 1 teaspoon of ground ginger
Preparation steps:
* Cut chicken into wings into three sections, discard wing tips. Place in a large re-sealable plastic bag. In a small bowl, whisk remaining ingredients until blended. Add to chicken; seal bag and turn to coat. Refrigerate overnight.
* Transfer chicken and marinade to crockpot. Cook, covered, on low for 3 1/2 hours or until the chicken is tender. Using tongs, remove wings to a serving plate.

* 2 teaspoons of dried minced garlic

* 1/4 cup of fresh lime juice
* 1 boneless pork butt or shoulder blade roast (3 lb.)
* 1 can of chopped green chiles (4.5oz)
* 1 can of green enchilada sauce (10 oz.)
* 1/2 cup of chopped fresh cilantro
* 2 packages of flour tortillas for burritos
* Salsa, if desired
Preparation steps:
* Spray crockpot with cooking spray. Place onion into crockpot. * 2 jars of Alfredo pasta sauce (15 oz. each)
* 4 teaspoons of chopped fresh rosemary leaves
* 9 no-boil lasagna noodles
* 3 cups of chopped cooked chicken
* 2 boxes of frozen chopped spinach, thawed, squeezed to drain (9 oz. each)
* 1 can of organic diced tomatoes, drained (14.5 oz.)
* 2 cups of shredded Italian cheese blend (8 oz.)
* Additional fresh rosemary, if desired
Preparation steps:
* Spray crockpot with cooking spray. In medium bowl, mix ricotta cheese, 1/2 cup of the Parmesan cheese and the salt. In large bowl, mix Alfredo sauce and 4 teaspoons of rosemary.
* In crockpot, spread about 1 1/4 cups of the Alfredo sauce. * 1/2 cup of white wine or chicken broth
* 6 tablespoons of butter, melted and divided
* 1 tablespoon of dried minced onion
* 1 tablespoon of garlic powder
* 1 tablespoon of Italian seasoning
* 3/4 teaspoon of salt, divided
* 3/4 teaspoon of pepper, divided
* 1 can of cream of mushroom soup, undiluted
* 1 package of cream cheese, softened (8 oz.)
* 2 cups of frozen broccoli florets, thawed
* 2 lbs. red potatoes, quartered
Preparation steps:
* Place chicken into crockpot. Combine the salad dressing, wine, 4 tablespoons of butter, onion, garlic powder, Italian seasoning, 1/2 teaspoon of salt and 1/2 teaspoons of pepper in a small bowl; pour over chicken.
* Cover and cook on low for 5 hours. Skim fat. Combine the soup, cream cheese and 2 cups of liquid from crockpot in a small bowl until blended; add to crockpot.

* 1 lb. of cooked kielbasa sausage, cut into 1-inch slices

* 2 lbs. of uncooked large shrimp in shells, thawed
* Cocktail sauce, optional
