Chicken Thighs with Ginger Peach Sauce Crockpot Recipe
Ingredients needed:
* 10 boneless, skinless chicken thighs
* 1 cup of sliced peeled fresh or frozen peaches
* 1 cup of golden raisins
* 1 cup of peach preserves
* 1/3 cup of chili sauce
* 2 tablespoons of minced crystallized ginger
* 1 tablespoon of reduced-sodium soy sauce
* 1 tablespoon of minced garlic
* Hot cooked rice, optional
Preparation steps:
* Place chicken into crockpot coated with cooking spray. Top with peaches and raisins. In a small bowl, combine the preserves, chili sauce, ginger, soy sauce and garlic. Spoon over top.
* Cover and cook on low for 4 to 5 hours or until chicken is tender.
* Serve with rice, if desired.

Since I probably use my crockpot more than I use my oven, I thought a blog for tasty and easy crockpot recipes would be great. I simply love my crockpot and am known as the queen of the crockpot. When you work 40 hours a week and have children with a lot of after school activities, the crockpot really simplifies life. So much healthier than fast food too :-).
