Cheese with Artichoke and Spinach Dip Crockpot Recipe
Ingredients needed:
* 1 cup of fresh mushrooms
* 1 tablespoon of butter
* 2 garlic cloves, minced
* 1 1/2 cups of mayonnaise
* 1 package of cream cheese, softened
* 1 cup and 2 tablespoons of grated Parmesan cheese, divided
* 1 cup of shredded part-skim mozzarella cheese, divided
* 1 can of water-packed artichoke hearts, rinsed, drained and chopped
* 1 package of frozen chopped spinach, thawed and squeezed dry
* 1/4 cup of chopped sweet red pepper
* Toasted French bread baguette slices
Preparation steps:
* In a large skillet, sauté mushrooms in butter until tender. Add garlic; cook 1 minute longer.
* In a large bowl, combine the mayonnaise, cream cheese, 1 cup Parmesan cheese and 3/4 cup of mozzarella cheese. Add the mushroom mixture, artichokes, spinach and red pepper.
* Transfer to crockpot. Sprinkle with the remaining cheeses. Cover and cook on low for 3 hours.
* Serve with baguette slices and enjoy.

Since I probably use my crockpot more than I use my oven, I thought a blog for tasty and easy crockpot recipes would be great. I simply love my crockpot and am known as the queen of the crockpot. When you work 40 hours a week and have children with a lot of after school activities, the crockpot really simplifies life. So much healthier than fast food too :-).
