Sweet and Sour Shrimp with Pineapple Crockpot Recipe
Ingredients needed:
* 3 cans of pineapple chunks, drained and 1 cup of juice reserved
* 2 packages of frozen snow peas, thawed
* 1/4 cup of cornstarch
* 1/3 cup plus 2 teaspoons of sugar
* 2 chicken bouillon cubes
* 2 cups of boiling water
* 4 teaspoons of soy sauce
* 1 teaspoon of ground ginger
* 1 pound shrimp, peeled, deveined and cleaned
* 1/4 cup of cider vinegar
* Hot cooked rice
Preparation steps:
* Drain pineapple chunks, reserving 1 cup juice. Place pineapple and snow peas into crockpot.
* Combine cornstarch and sugar in medium saucepan. Dissolve bouillon cubes in boiling water and add to saucepan. Mix in 1 cup reserved pineapple juice, soy sauce and ginger. Bring to a boil and cook for 1 minute. Pour into crockpot. Cover and cook on low for 5 hours.
* Add shrimp and vinegar. Cover and cook low for 30 minutes or until shrimp are done.
* Serve over hot rice.

Since I probably use my crockpot more than I use my oven, I thought a blog for tasty and easy crockpot recipes would be great. I simply love my crockpot and am known as the queen of the crockpot. When you work 40 hours a week and have children with a lot of after school activities, the crockpot really simplifies life. So much healthier than fast food too :-).
