Shepherd's Pie with Red Wine Crockpot Recipe
Ingredients Needed:
* 1 1/4 pounds ground lamb
* 3/4 cup of frozen chopped onions
* 3 teaspoons of dried rosemary
* 2 teaspoons of chopped garlic
* 1 can of cream of mushroom soup (I use Campbell's)
* 1/3 cup of dry red wine
* 2 tablespoons of mushroom gravy mix
* 1 bag of frozen petite mixed vegetables
* 1 container of home-style mashed potatoes (21-ounce)
* 1/4 cup garlic and herb bread crumbs
* Canola oil cooking spray
Preparation Steps:
* Coat your crockpot with cooking spray. In a large skillet, cook and stir ground lamb until browned. Drain.
* Add lamb to crockpot. Stir in onions, 1 teaspoon of the rosemary, and the garlic until combined.
* In a large bowl, whisk together the remaining 2 teaspoons rosemary, the mushroom soup, wine, and gravy mix. Stir in mixed vegetables until combined. Pour vegetable mixture over lamb in crockpot.
* Microwave potatoes in container, uncovered, on high heat for 2 minutes. Stir to loosen. Spread potatoes on top of vegetable mixture in crockpot. Top with bread crumbs.
* Cover and cook on low for 5 hours.

Since I probably use my crockpot more than I use my oven, I thought a blog for tasty and easy crockpot recipes would be great. I simply love my crockpot and am known as the queen of the crockpot. When you work 40 hours a week and have children with a lot of after school activities, the crockpot really simplifies life. So much healthier than fast food too :-). Just wondering if you need to brown the meat first before adding it to the crockpot
