Chicken and Sweet Potato Stew Crockpot Recipe
Ingredients needed:
* 4 boneless skinless chicken breasts, cut into bite-size pieces
* 2 medium sweet potatoes, peeled and cubed
* 2 medium Yukon Gold potatoes, peeled and cubed
* 2 medium carrots, peeled and cut into 1/2 inch slices
* 1 can of whole stewed tomatoes, undrained
* 1 teaspoon of salt
* 1 teaspoon of paprika
* 1 teaspoon of celery seeds
* 1/2 teaspoon of black pepper
* 1/8 teaspoon of ground cinnamon
* 1/8 teaspoon of nutmeg
* 1 cup of low-sodium chicken broth
* 1/4 cup of fresh basil, chopped
Preparation steps:
* Combine chicken, potatoes, carrots, tomatoes with juice, salt, paprika, celery seeds, pepper, cinnamon, nutmeg and broth into crockpot.
* Cover and cook on low for 7 hours. For faster cooking time, cook on high for half that time.
* Sprinkle with basil and enjoy.

Since I probably use my crockpot more than I use my oven, I thought a blog for tasty and easy crockpot recipes would be great. I simply love my crockpot and am known as the queen of the crockpot. When you work 40 hours a week and have children with a lot of after school activities, the crockpot really simplifies life. So much healthier than fast food too :-).
