Teriyaki Beef and Vegetables Crockpot Recipe
Ingredients needed:
* 1 1/2 lb beef round steak, trimmed of fat, cut into thin bite-sized strips
* 2 tablespoons of cornstarch
* 1/4 cup of soy sauce
* 1/4 cup of dry sherry or apple juice
* 2 tablespoons of packed brown sugar
* 1 teaspoon of ground ginger
* 1 clove of garlic, finely chopped
* 1 can of sliced water chestnuts, drained
* 1/4 cup of water
* 1 bag of frozen broccoli, carrots & cauliflower, thawed
* 1 1/2 cups of uncooked regular long-grain white rice
* 3 more cups of water
Preparation steps:
* In crockpot, mix steak and 1 tablespoon of the cornstarch until evenly coated. Gently stir in soy sauce, sherry, brown sugar, ginger and garlic. Top with water chestnuts.
* Cover and cook on low for 6 hours.
* About 30 minutes before serving, in a small bowl, blend 1/4 cup of water and remaining 1 tablespoon cornstarch until smooth. Stir into beef mixture. Stir in vegetables.
* Increase heat to high; cover and cook for 30 minutes longer. Meanwhile, cook rice in 3 cups of water as directed on package.
* Serve beef mixture over rice and enjoy.
Since I probably use my crockpot more than I use my oven, I thought a blog for tasty and easy crockpot recipes would be great. I simply love my crockpot and am known as the queen of the crockpot. When you work 40 hours a week and have children with a lot of after school activities, the crockpot really simplifies life. So much healthier than fast food too :-). Sounds good to me, I would add pineapple too !! And maybe some green pepper.
