Cheesy Chicken and Broccoli Crockpot Recipe
Ingredients needed:
* 1 package of organic cream of mushroom condensed soup
* 2 cooked chicken breasts, cubed
* 1 cup of long-grain rice
* 4 oz. reduced-fat Cheddar, shredded (about 1 cup)
* 1 bag of frozen broccoli florets, thawed
Preparation steps:
* Coat crockpot with cooking spray.
* Add all ingredients except broccoli. Stir in 3 cups of water.
* Cover and cook on low for 4 to 5 hours. For faster cooking time, cook on high for 2 hours.
* Stir in broccoli and cook for 30 minutes longer.
Enjoy

Since I probably use my crockpot more than I use my oven, I thought a blog for tasty and easy crockpot recipes would be great. I simply love my crockpot and am known as the queen of the crockpot. When you work 40 hours a week and have children with a lot of after school activities, the crockpot really simplifies life. So much healthier than fast food too :-). Why does the chicken need to be pre-cooked if you are slow cooking it for 4-5 hours?

ReplyDeleteThe main reason you would pre-cook the chicken for a slow cooker recipe is because if it is added raw, as it cooks it releases bits of protein that are not attractive in the finished dish (little white flecks). If using the breasts whole, you can brown them quickly on both sides without cooking through all the way, and this will avoid the appearance problem and also avoid drying it out. If the chicken is cut up and stirred into a mixture, it will be better to cook it completely first.

ReplyDeleteI made this with frozen chicken and it came out just fine. Just needs to cook for a while longer. I use the temperature probe to determine when it is done rather than just time it. Other than that I followed the directions exactly. It was really good.

ReplyDeleteI am going to attempt this tonight so all together it should take 5hours and 30 minutes correct? Because i am going to slow cook it and i dont put the broccoli in until the full 4 or 5 hours of low cooking the rest of the indredients are done correct? I cant wait to make this and eat it!!!!!
ReplyDeleteThat is correct. You only put the broccoli in for the last 30 minutes. Otherwise, the broccoli tends to get soggy. Hope it turns out great.

ReplyDeleteAnne- You do not need to steam and cool the broccoli first. I do not do that with any of my crockpot recipes and they turn out great.

ReplyDeleteThis was really good except I cooked it for 8 hrs because of work. So the rice was a little overcooked and mushy but that was my fault for cooking it so long. Definitely a great weekend meal!
