Rough-Cut Smoky Red Pork Roast Crockpot Recipe
Ingredients needed:
* 1 pork shoulder roast (about 4 lbs.)
* 1 can of stewed tomatoes, drained (about 14 ounces)
* 1 can of tomato paste with basil, oregano and garlic (6 ounces)
* 1 red bell pepper, chopped
* 2 canned chipotle peppers in adobo sauce, diced
Preparation steps:
* Coat inside of crockpot with nonstick cooking spray. Add pork.
* Combine tomatoes, tomato paste, bell pepper and chipotle peppers in small bowl; stir to blend. Pour over pork.
* Cover and cook on high for 5 hours.
* Scrape tomato mixture into cooking liquid. Remove pork to cutting board; cover loosely with foil.
* Let stand for 15 minutes before slicing.
* Serve sauce over pork slices.

Since I probably use my crockpot more than I use my oven, I thought a blog for tasty and easy crockpot recipes would be great. I simply love my crockpot and am known as the queen of the crockpot. When you work 40 hours a week and have children with a lot of after school activities, the crockpot really simplifies life. So much healthier than fast food too :-).
