Asian pork with noodles crockpot recipe
Ingredients needed:
* 2 cans of reduced sodium chicken broth
* 2 tablespoons of soy sauce
* 2 tablespoons of rice wine vinegar
* 1/4 cup hoisin sauce
* 2 tablespoons of honey
* 2 medium cloves garlic, minced
* 2 tablespoons of chopped fresh ginger
* 1 pound of pork tenderloin
* 1 pound baby bok choy, cliced
* 1 cup sliced fresh shiitake mushrooms
* 8 ounces rice noodles, uncooked
* 1/4 cup chopped peanuts
Preparation needed:
* Combine chicken broth, soy sauce, vinegar, hoisin, garlic, ginger and honey in crockpot. Stir well to combine. Place pork tenderloin in crockpot; cover and cook on low for 6 hours
* Remove pork from crockpot. Add bok choy, mushrooms, and noodles to crockpot, making sure that noodles are submerged in liquid; cook 20 to 30 minutes
* When pork is cool enough to handle, shred with forks. Return shredded pork to crockpot; stir well to combine and rewarm
* To serve, divide pork, vegetables and noodles among bowls, pour in 1/2 cup of broth. Sprinkle each serving with peanuts
