Chicken Gumbo Crockpot Recipe

Chicken Gumbo Crockpot Recipe

Ingredients needed:

* 1 tablespoon of olive oil
* 8 oz of fresh chorizo sausage, removed from casings
* 2 onions, finely chopped
* 4 stalks of celery, diced
* 4 cloves of garlic, minced
* 1 1/2 teaspoons of Cajun seasoning
* 1 teaspoon of salt
* 1 teaspoon of cracked black peppercorns
* 1 bay leaf
* 1/4 cup of short-grain brown rice
* 2 tablespoons of tomato paste
* 1 can of diced tomatoes
* 4 cups of chicken breast
* 1 lb of boneless chicken thighs (cut into bite size pieces)
* 2 cups of sliced okra
* 1 red bell pepper, seeded and diced
* 1/4 teaspoon of cayenne pepper
* Finely chopped green onions

Preparation steps:

* In a skillet, heat oil over medium heat. Add sausage, onions and celery and cook until sausage is cooked through. Stir occasionally. Add garlic, Cajun seasoning to taste, salt, peppercorns and bay leaf and cook for about 1 minute. Add rice and toss until coated. Stir in tomato paste. Add tomatoes with juice and bring to a boil.
* Transfer to crockpot. Stir in broth and chicken. Cover and cook on low for 5 hours or on high for 2 1/2 hours. Stir in okra, bell pepper and cayenne. Cover and cook on high for 20 minutes, until okra is tender. Discard bay leaf. Garnish with green onions.
