Buffalo chicken sandwich crockpot recipe
Ingredients needed:
* 3 pounds of boneless skinless chicken thighs
* 1 3/4 cups of buffalo wing sauce
* 1 seedless english cucumber
* 12 large sandwich buns
* 3/4 cup of crumbled blue cheese (approximately 3 oz)
Preparation steps:
* Spray crockpot with cooking spray. In crockpot, place chicken and 1 cup of buffalo wing sauce.
* Cover and cook on low for 7 1/2 hours
* Remove chicken from crockpot to medium sized bowl. Place strainer over another medium sized bowl. Carefully pour cooking liquid from crockpot through strainer; skim fat. Reserve 1 1/2 cups of liquid. Stir chicken to separate into pieces. Return chicken to crockpot; stir in reserved liquid.
* Increase heat setting to high. Cover and cook about 15 minutes.
* Cut cucumber in half crosswise. With vegetable peeler, cut 1 strip of peel lengthwise from 1 cucumber half; discard strip that is mostly peel. Continue cutting thin strips lengthwise from cucumber, making about 18 strips. Repeat with other half of cucumber.
* Fill each bun with 1/2 cup chicken mixture, about 3 strips of cucumber, 1 tablespoon of the remaining buffalo wing sauce and 1 table spoon of cheese.
