Turkey gumbo crockpot recipe
Ingredients needed:
* 3 tablespoons of vegetable oil
* 3 tablespoons of whole wheat flour
* 1 cup of onion, chopped
* 2 ribs of celery, chopped
* 1 medium green bell pepper, chopped
* 4 cloves of garlic, minced
* 1/2 teaspoon of dried thyme
* 1/8 teaspoon of cayenne
* 12 oz turkey breast cutlets, cut into 1/2" pieces
* 2 cups of reduced sodium chicken broth
* 1 can of no-salt added diced tomatoes
* 1 cup of frozen cut okra
* 4 oz turkey kielbasa, thinly sliced
* 1 dried bay leaf
* 2 cups of cooked brown rice
Preparation steps:
* Heat oil in medium cast-iron skillet over medium high heat. Add flour and whisk to combine well. Reduce heat to medium and whisk until color is golden brown (approximately 8 to 10 minutes). Add onion, celery, bell pepper, garlic, thyme, cayenne, and 1/4 teaspoon each salt and black pepper. Cook, stirring, until vegetables are softened, about 5 minutes.
* Transfer to crockpot coated with cooking spray. Add turkey, broth, tomatoes (with juice), okra, kielbasa, and bay leaf. Cover and cook until turkey is tender (approximately 3 to 4 hours).
* Discard bay leaf. Season gumbo to taste and serve over rice.
