Greek Chicken Pita Folds Crockpot Recipe
Ingredients needed:
* 1 medium onion, halved, sliced
* 1 clove of garlic, finely chopped
* 1 lb boneless skinless chicken thighs
* 1 1/2 teaspoons lemon-pepper seasoning
* 1/2 teaspoon of dried oregano leaves
* 1/4 teaspoon of ground allspice
* 4 pita (pocket) breads
* 1/2 cup of plain yogurt
* 1 plum tomato (Roma), sliced
* 1/2 medium cucumber, chopped (about 1/2 cup)
Preparation steps:
* In crockpot, mix onion, garlic, chicken thighs, lemon-pepper seasoning, oregano and allspice; mix to coat chicken with seasoning.
* Cover and cook on low for 7 hours.
* Heat pita breads as directed on package. Meanwhile, remove chicken from crockpot; place on cutting board. Shred chicken with two forks.
* To serve, stir yogurt into onion mixture in crockpot. Spoon chicken onto warm pita breads. With slotted spoon, transfer onion mixture onto chicken; top with tomato and cucumber. Fold each pita bread in half.
