Ingredients needed:
* Canola oil cooking spray
* 1 can of whole peeled tomatoes with basil, cut up
* 1 package of Italian sausage links (approximately 16 ounces)
* 1 can of vegetable broth
* 1 can of Campbell's tomato soup
* 3 tablespoons of tomato paste
* 1 tablespoon of basil-and-garlic seasoning blend
* 2 packages of three-cheese tortellini
* 1 1/2 cups of shredded mozzarella cheese
Preparation steps:
* Coat crockpot with cooking spray. Place tomatoes and sausage in crockpot; set aside.
* In a large bowl, whisk together vegetable broth, tomato soup, tomato paste, and seasoning blend until smooth. Pour into crockpot. Stir until combined.
* Cover and cook on high for 3 hours. During the last 30 minutes of cooking, stir in tortellini.
* Once finished, turn off crockpot. Sprinkle mozzarella cheese over top of sausage mixture. Cover and let sit until cheese melts some.
