Mexican Style Spinach Crockpot Recipe

Mexican Style Spinach Crockpot Recipe



Ingredients needed:

* 3 packages of frozen chopped spinach (10 ounces each)
* 1 tablespoon of canola oil
* 1 onion, chopped
* 1 clove of garlic, minced
* 2 Anaheim chilies, roasted, peeled and minced
* 3 fresh tomatillos, roasted, husks removed and chopped
* 6 tablespoons of fat-free sour cream (optional)

Preparation steps:

* Place frozen spinach into crockpot.
* Heat oil in large skillet over medium heat until hot. Cook and stir onion and garlic until onion is soft but not browned, about 5 minutes.
* Add chilies and tomatillos; cook about 3 to 4 minutes longer. Add mixture to crockpot.
* Cover and cook on low for 5 hours. Stir before serving.

Serve with dollops of sour cream and enjoy.
