Veggie Lover's Minestrone Crockpot Recipe



Ingredients needed:

* 4 cups of vegetable broth
* 1 can of diced tomatoes, undrained (28 oz.)
* 1 box of frozen baby lima beans, thawed (9 oz.)
* 2 medium onions, chopped (1 1/2 cups)
* 2 medium carrots, chopped (3/4 cup)
* 2 cloves of garlic, finely chopped
* 1/2 teaspoon of salt
* 1/2 teaspoon of freshly ground pepper
* 1 1/2 cups of uncooked rotini pasta
* 1 medium zucchini, cut in half lengthwise, then cut crosswise into 1/4-inch pieces
* 1 medium yellow summer squash, cut in half lengthwise, then cut crosswire into 1/4-inch pieces
* 1 container of refrigerated basil pesto (7 oz.)
* 1/2 cup of shaved Parmesan cheese (2 oz.)

Preparation steps:

* Spray crockpot with cooking spray. In crockpot, mix broth, tomatoes, lima beans, onions, carrots, garlic, salt and pepper.
* Cover and cook on low for 6 hours. Stir in pasta, zucchini and yellow squash. Cover and cook for 1 hour longer or until vegetables are tender.
* Top individual servings with pesto and cheese.
