Manchego Eggplant Crockpot Recipe

Ingredients needed:

* 4 large eggplants
* 1 cup of all-purpose flour
* 2 tablespoons of olive oil
* 1 jar of roasted garlic flavor pasta sauce
* 2 tablespoons of Italian Seasoning
* 1 cup of grated manchego cheese (4 ounces)
* 1 jar of roasted eggplant flavor marinara pasta sauce

Preparation steps:

* Peel eggplants and slice horizontally into 3/4-inch-thick pieces. Place flour in shallow bowl. Dredge each slice of eggplant in flour to coat.
* Heat oil in large skillet over medium-high heat. In batches, lightly brown eggplant on both sides.
* Pour thin layer of garlic pasta sauce into the bottom of the crockpot. Top with eggplant slices, Italian seasoning, manchego cheese and marinara pasta sauce. Repeat layers until all ingredients have been used.
* Cover and cook on high for 2 hours.
