Beefy Tortellini Crockpot Recipe

Ingredients needed:

* 1/2 pound of ground beef
* 1 jar of roasted tomato and garlic pasta sauce
* 1/2 cup of water
* 8 ounces of sliced button or exotic mushrooms, such as shiitake or cremini
* 1/2 teaspoon of red pepper flakes (optional)
* 1 package of uncooked three-cheese tortellini
* 3/4 cut grated Asiago or Romano cheese
* Chopped fresh Italian parsley (optional)

Preparation steps:

* Brown beef in a large skillet over medium-high heat for approximately 6 to 8 minutes, stirring to break up meat. Drain fat.
* Coat inside of crockpot with nonstick cooking spray. Stir pasta sauce and water into crockpot. Add mushrooms; stir to combine. Stir in meat, red pepper flakes, if desired, and tortellini. Cover and cook on low for 2 hours or on high for 1 hour. Stir.
* Cover and cook on low for 2 1/2 more hours or until pasta is tender. Top with cheese. Garnish with parsley.

(Serves 6)
