Blue Cheese Chicken Crockpot Recipe



Ingredients needed:

* 2 cups of frozen broccoli and cauliflower
* 1 medium onion, halved then quartered
* 1 cup of chicken broth
* 1/3 cup of butter, softened
* 2 tablespoons of dried chives
* 2 teaspoons and 1 tablespoon of chopped garlic
* 1 teaspoon of lemon juice
* 4 boneless, skinless chicken breast halves
* 1 packet of garlic and herb seasoned coating mix
* 1 can of white sauce
* 1 cup of crumbled blue cheese

Preparation steps:

* In crockpot, combine frozen vegetables and onions. Pour 1/4 cup of the chicken broth over vegetables. In a small bowl, stir together butter, chives, 2 teaspoons of the garlic, and the lemon juice until combined; set aside.
* Place chicken breasts on a cutting board and cover them with plastic wrap. Using a meat mallet, gently pound chicken until 1/3 inch thick. Spread 1/4 of the butter mixture in an even layer on top of each pounded breast. Roll each breast from one end toward the other, enclosing butter mixture. If necessary, secure rolls with wooden toothpicks.
* Pour coating mix into a pie plate. Roll chicken rolls in coating mix until well coated. Place rolls on top of vegetables in crockpot.
* Cover and cook on low for 2 hours.
* In a medium sized bowl. whisk together the remaining 3/4 cup of chicken broth, the remaining 1 tablespoon of garlic, and white sauce until smooth. Stir in blue cheese. Pour over the chicken and vegetables in crockpot.
* Cover and cool on low for 1 1/2 hours longer. Remove toothpicks, serve and enjoy.

(Note: I had received inquiries on white sauce in previous recipes. You can make your own white sauce by just mixing together the following ingredients):

•2 tablespoons butter (melted)
•2 tablespoons flour
•1 cup milk
• salt
• white or black pepper

White sauce is another name for Béchamel. Hope that helps.
