Squash Medley Crockpot Recipe
Ingredients needed:
* 2 butternut squash, peeled, seeded and diced
* 1 can of tomatoes, undrained
* 1 can of corn, drained
* 2 onions, chopped
* 2 green bell peppers, chopped
* 2 teaspoons of minced garlic
* 2 green chiles, chopped
* 1 cup of chicken broth
* 1 teaspoon of salt
* 1/2 teaspoon of black pepper
* 1 can of tomato paste
Preparation steps:
* Combine squash, tomatoes with juice, corn, onions, bell peppers, garlic, chiles, broth, salt and black pepper into crockpot.
* Cover and cook on low for 6 hours
* Remove about 1/2 cup cooking liquid and blend with tomato paste. Add back to crockpot and stir well.
* Cook on low for 30 more minutes or until heated through.
