Reuben and Sauerkraut Sandwiches Crockpot Recipe
Ingredients needed:
* 1 mild-cure corned beef (about 1 and 1/2 pounds)
* 2 cups of sauerkraut, drained
* 1/2 cup of beef broth
* 1 small onion, sliced
* 1 clove of minced garlic
* 1/4 teaspoon of caraway seeds
* 5 peppercorns
* 8 slices of pumpernickel or rye bread
* 4 slices of Swiss cheese
* Mustard
Preparation steps:
* Trim excess fat from corned beef. Place meat into crockpot. Add sauerkraut, broth, onion, garlic, caraway seeds and peppercorns.
* Cover and cook on low for 8 hours.
* Remove beef from crockpot. Cut beef across grain into slices. Divide evenly among 4 slices of bread. Top each slice with 1/2 cup drained sauerkraut mixture and 1 slice cheese. Spread mustard on top and enjoy.
