Chicken Sausage and Peppers Crockpot Recipe




Ingredients needed:

* 1 tablespoon of olive oil
* 1 clove of minced garlic
* 1/2 yellow onion, minced
* 1 pound of sweet or hot Italian sausage
* 1 can of whole tomatoes, drained and seeded
* 1/2 red bell pepper, cut into 1/2 inch slices
* 1/2 yellow bell pepper, cut into 1/2 inch slices
* 1/2 orange bell pepper, cut into 1//2 inch slices
* 3/4 cup of chopped fresh basil
* Crushed red pepper flakes, to taste
* Salt and pepper
* Hot cooked pasta

Preparation steps:

* Heat oil in large skillet over medium heat until hot. Add garlic and onion, and cook until translucent.
* Remove sausage from package and cut into 1 inch chunks. Add to skillet and cook for around 4 to 5 minutes or until just beginning to brown.
* Transfer to crockpot with slotted spoon, skimming off some of the fat.
* Add tomatoes, bell peppers, basil, pepper flakes, salt and pepper to crockpot. Stir to blend.
* Cook on high for 3 hours or until peppers have softened.
* Serve over pasta and enjoy.
