Potato and Sausage Breakfast Casserole Crockpot Recipe
Ingredients needed:
* 1 pound of kielbasa, or smoked sausage diced
* 1 cup of chopped onion
* 1 cup of chopped red bell pepper
* 1 package of refrigerated Southwestern-style hash browns (approximately 20 ounces)
* 10 large eggs
* 1 cup of milk (I prefer low-fat milk)
* 1 cup of shredded Monterey Jack or sharp Cheddar cheese
* nonstick cooking spray
Preparation steps:
* Coat crockpot with nonstick cooking spray. Cook sausage and onion in a large skillet over medium heat. Cook sausage until browned. Drain and discard excess fat. Stir in bell pepper.
* Place 1/3 of potatoes into crockpot. Top with 1/2 of sausage mixture. Repeat layers. Spread remaining 1/3 of potatoes evenly on top.
* Whisk eggs and milk in medium bowl. Pour evenly over potatoes. Cover; cook on low for 6 hours.
* Turn off crockpot. Sprinkle on cheese, and let stand for about 10 minutes until cheese is melted.
* Serve and enjoy
