Veggie Meatball Soup Crockpot Recipe



Ingredients needed:

* 1 package of frozen fully cooked Italian meatballs (approximately 12 ounces)
* 1 can of diced tomatoes, undrained
* 3 cups of beef broth
* 2 cups of shredded cabbage
* 1 can of kidney beans, rinsed and drained
* 1 medium zucchini, sliced
* 1 cup of fresh green beans
* 1 cup of water
* 2 medium carrots, sliced
* 1 teaspoon of dried basil
* 1/2 teaspoon of minced garlic
* 1/4 teaspoon of salt
* 1/8 teaspoon of dried oregano
* 1/8 teaspoon of pepper
* 1 cup of uncooked elbow macaroni
* 1/4 cup of minced fresh parsley
* Grated Parmesan cheese, optional

Preparation steps:

* In crockpot, combine the meatballs, tomatoes, broth, cabbage, beans, zucchini, green beans, water, carrots, basil, garlic, salt, oregano and pepper.
* Cover and cook on low for 6 hours.
* Stir in the macaroni and parsley; cook 30 minutes longer or until macaroni is tender.
* Serve with cheese if desired and enjoy.
