Broccoli and Cheese Soup Crockpot Recipe



Ingredients needed:

* 1/4 cup of butter or margarine
* 1 large onion, chopped (1 cup)
* 1/4 cup of all-purpose flour
* 1 can of evaporated milk (12 oz.)
* 4 cups of chicken broth
* 1 bag of frozen baby broccoli florets, thawed
* 1/2 teaspoon of freshly ground pepper
* 1/4 teaspoon of salt
* 1 loaf of prepared cheese, cut into cubes (8 oz.)
* 1 1/2 cups of shredded extra-sharp Cheddar cheese (6 oz.)
* 1 cup of shredded Parmesan cheese (4 oz.)
* Additional shredded extra-sharp Cheddar cheese, if desired

Preparation steps:

* Spray crockpot with cooking spray. In a 12-inch skillet, melt butter over medium heat. Cook onion in butter for 4 minutes, stirring occasionally, until tender. Stir in flour. Cook for 1 minute, stirring constantly. Gradually stir in milk until smooth. Pour mixture into crockpot. Stir in broth, broccoli, pepper and salt.
* Cover and cook on low for 4 hours or until bubbly.
* Add cheese cubes to crockpot; stir until melted. Add 1 1/2 cups of Cheddar cheese and the Parmesan cheese; stir until melted.
* Sprinkle individual servings with additional Cheddar cheese.
