Lentil and Spinach Soup Crockpot Recipe



Ingredients needed:

* 4 teaspoons of olive oil
* 1 large onion, finely chopped (1 cup)
* 4 cloves of garlic, finely chopped
* 1 tablespoon of tomato paste
* 1 1/2 cups of sliced carrots (4 medium)
* 1 cup of dried lentils (8 oz.), sorted and rinsed
* 4 cups of chicken broth
* 4 cups of vegetable broth
* 4 slices of bacon, chopped
* 2 dried bay leaves
* 1 teaspoon of dried thyme leaves
* 3/4 teaspoon of salt
* 1/2 teaspoon of pepper
* 1 bag of fresh baby spinach leaves (6 oz.)

Preparation steps:

* Spray crockpot with cooking spray. In a 10-inch skillet, heat oil over medium heat. Cook onion in oil for 2 minutes, stirring frequently, until tender. Add garlic and tomato paste; cook for 1 minute. Spoon mixture into crockpot. Stir in all the remaining ingredients except for the spinach.
* Cover and cook on low for 8 1/2 hours. Discard bay leaves. Stir in spinach just prior to serving.
