Creole Fish and Corn Stew Crockpot Recipe
Ingredients needed:
* 2 tablespoons of olive oil
* 1 onion, finely chopped
* 3 garlic cloves, finely chopped
* 3 celery stalks, finely chopped
* 3 carrots, peeled and finely chopped
* 1 teaspoon of dried oregano
* few sprigs of thyme, leaves only
* 1 teaspoon of cayenne pepper (use a little less if you don't like really spicy foods)
* 1 can of creamed corn
* 1 can of regular corn, drained
* 2 cups of hot vegetable stock
* salt and freshly ground pepper
* 2 potatoes, peeled and diced into bite-size pieces
* 7 ounces of precooked shrimp, chopped
* 10 ounces of white fish such as catfish or cod, skinned and cut into chunky pieces
Preparation steps:
* Heat the oil in a skillet, add the onion, and cook for 4 minutes. Then stir in the garlic, celery, and carrot and cook over low heat for 5 more minutes.
* Stir in the herbs and cayenne pepper, then add both the cans of corn. Transfer everything to the crockpot, pour in the stock, season with salt and pepper, and then add the potatoes.
* Cover and cook on high for 3 to 4 hours. For the last 15 minutes of cooking, add the shrimp and fish and cook until the fish is cooked through. Taste and season further, if necessary.
* Serve in bowls with some crusty baked bread.
