Boneless Pork Roast with Garlic Crockpot Recipe



Ingredients needed:

* 1 boneless pork rib roast (2 to 2 1/2 pounds, ) rinsed and patted dry
* Salt and black pepper
* 3 tablespoons olive oil, divided
* 4 cloves garlic, minced
* 1/4 cup of chopped fresh rosemary
* 1/2 lemon, cut into 1/8 to 1/4-inch slices
* 1/2 cup of chicken broth
* 1/4 cup of dry white wine

Preparation steps:

* Season pork with salt and pepper.
* Combine 2 tablespoons of oil, garlic and rosemary in small bowl. Rub onto pork. Roll and tie pork snugly with kitchen string. Tuck lemon slices under string and into ends of roast.
* Heat remaining 1 tablespoon of oil in large skillet over medium heat. Add pork; cook 5 to 7 minutes or until browned on all sides. Remove to crockpot.
* Return skillet to heat. Add broth and wine, stirring up any browned bits. Pour over pork in crockpot. Cover; cook on low for 8 1/2 hours or on high for 4 hours.
* Remove roast to cutting board. Cover loosely with foil; let stand for 15 minutes before removing kitchen string and slicing.
* Serve with cooking liquid.
