Ham and Brie Bread Pudding Crockpot Recipe



Ingredients needed:

* Nonstick cooking spray
* 4 eggs
* 3 cups of milk
* 2 cloves of garlic, minced
* 1 teaspoon of dried thyme, crushed
* 1/4 teaspoon of ground black pepper
* 6 cups of cubed herbed Italian flatbread (focaccia), dried
* 1 1/2 cups of cubed cooked ham
* 4 ounces of Brie cheese, cut into 1/2-inch pieces
* 1/3 cup of snipped dried tomatoes (not oil-pack)

Preparation steps:

* Lightly coat crockpot with cooking spray.
* In a large bowl, whisk together eggs, milk, garlic, thyme, and pepper. Gently stir in bread cubes, ham, Brie, and dried tomatoes. Spoon mixture into the crockpot.
* Cover and cook on low for 4 hours or until a knife inserted in the center comes out clean (mixture will puff), giving crockery liner a half turn halfway through cooking, if possible.
* If desired, garnish with fresh thyme.

Serve and enjoy
(Serves 6)

Note: To make dried focaccia cubes, preheat oven to 300 degrees. Cut focaccia into 1/2-inch cubes. Spread in a single layer in a baking pan. Bake for 15 minutes or until cubes are dry, stirring twice. Let bread cubes stand, loosely covered, at room temperature overnight.
