Green Chile Stew Crockpot Recipe



Ingredients needed:

* 2 lb. boneless pork loin, cut into 1 1/2-inch cubes
* 1 medium onion, chopped (1/2 cup)
* 1 jalapeno chile, seeded, chopped
* 1 can of Old El Paso chopped green chiles (4.5 oz.)
* 1 can of dice tomatoes, undrained (14.5 oz.)
* 1 can of pinto beans, drained and rinsed (15 oz.)
* 1 cup of sweet frozen corn (from 12-oz. bag), thawed
* 3 cloves garlic, finely chopped
* 2 teaspoons dried oregano leaves
* 2 teaspoons of ground cumin
* 1/4 teaspoon of salt
* 1/4 teaspoon of pepper
* 1/3 cup of Old El Paso salsa verde
* 1/2 cup of chicken broth

Ingredients needed for Garnishes:

* 1/2 cup of sour cream
* 1/4 cup of chopped green onions (4 medium)
* 1 cup of shredded Cheddar cheese (4 oz.)

Preparation steps:

* Spray crockpot with cooking spray. In crockpot, place all stew ingredients; stir well.
* Cover and cook on low for 9 to 10 hours.
* Garnish individual servings with sour cream, green onions and cheese.
