Turkey Tortilla Stew Crockpot Recipe



Ingredients needed:

* 1 1/4 pounds of turkey breast tenderloin, cut into 1-inch pieces
* 1 can of diced tomatoes, undrained
* 1 cup of chopped onion (1 large)
* 3/4 cup of chopped green sweet pepper (1 medium)
* 1/2 cup of reduced-sodium chicken broth
* 3 tablespoons of tomato paste
* 2 teaspoons of ground cumin
* 2 teaspoons of chili powder
* 1/2 teaspoon of ground black pepper
* 1/4 teaspoon of salt
* 4 6-inch corn tortillas, cut into 1/4-inch strips
* Nonstick cooking spray
* 1/8 teaspoon of salt
* Desired toppings, such as sour cream, salsa, sliced avocado, and/or lime wedges (optional)

Preparation steps:

* In crockpot, combine turkey, tomatoes, onion, sweet pepper, broth, tomato paste, cumin, chili powder, black pepper and the 1/4 teaspoon of salt.
* Cover and cook on low for 6 hours or on high for 3 hours.
* Meanwhile, preheat oven to 400 degrees. Spread tortilla strips on a large baking sheet; coat with cooking spray. Sprinkle with the 1/8 teaspoon of salt; toss and spread into an even layer. Bake for 10 minutes or until golden, tossing once halfway through baking.
* To serve, ladle stew into serving bowls. Garnish with tortilla strips and, if desired, assorted toppings.
