Pumpkin Bread Pudding Crockpot Recipe



Ingredients needed:

* 2 cups of whole milk
* 1/2 cup plus 2 tablespoons butter, divided
* 1 cup of packed brown sugar, divided
* 1 cup solid-pack pumpkin
* 3 eggs
* 1 tablespoon of ground cinnamon
* 2 teaspoons of vanilla
* 1/2 teaspoon of ground nutmeg
* 1/4 teaspoon of salt
* 16 slices cinnamon raisin bread, torn into small pieces
* 1/2 cup of whipping cream
* 2 tablespoons of bourbon (optional)

Preparation steps:

* Combine milk and 2 tablespoons butter in medium microwavable bowl. Microwave on high for 3 minutes or until very warm.
* Whisk 1/2 cup of brown sugar, pumpkin, eggs, cinnamon, vanilla, nutmeg and salt in large bowl until well blended. Whisk in milk mixture until blended. Add bread cubes; toss to coat.
* Coat inside of crockpot with nonstick cooking spray. Add bread mixture. Cover and cook on high for 2 hours or until knife inserted into center comes out clean. Turn off heat. Uncover; let stand for 15 minutes.
* Combine remaining 1/2 cup of butter, remaining 1/2 cup of brown sugar and cream in small saucepan; bring to a boil over high heat, stirring frequently.
* Remove from heat. Stir in bourbon, if desired. Spoon bread pudding into individual bowls; top with sauce.

Serve and enjoy
