Pork Loin with Sherry and Red Onions Crockpot Recipe



Ingredients needed:

* 3 large red onions, thinly sliced
* 1 cup of pearl onions, blanched and peeled
* 2 tablespoons of unsalted butter or margarine
* 2 1/2 pounds of boneless pork loin, tied
* 1/2 teaspoon of salt
* 1/2 teaspoon of black pepper
* 1/2 cup of cooking sherry
* 2 tablespoons of chopped fresh Italian parsley
* 1 1/2 tablespoons of cornstarch
* 2 tablespoons of water

Preparation steps:

* Cook and stir red onions and pearl onions in butter in medium skillet until tender.
* Rub pork loin with salt and pepper and place into crockpot. Add cooked onions, sherry and parsley. Cover and cook on low for 9 hours or on high for 5 1/2 hours.
* Remove pork loin from crockpot; let stand for 15 minutes before slicing. Meanwhile, combine cornstarch and water. Stir in cooking liquid and cook on low until sauce has thickened.
* Serve pork loin with onions and sherry sauce.
