Squash and Pork Stew Crockpot Recipe



Ingredients needed:

* 2 lb. boneless pork loin, cut into 1 1/2-inch cubes
* 1 medium butternut squash, peeled, seeded and cut into 1 1/2-inch cubes
* 6 small red potatoes, quartered
* 4 medium carrots, cut into 1/2-inch slices (about 2 cups)
* 1 medium onion, chopped
* 2 cloves of garlic, finely chopped
* 2 dried bay leaves
* 2 teaspoons of rubbed sage
* 1 teaspoon of salt
* 1/2 teaspoon of pepper
* 1 can of crushed tomatoes, undrained (28 oz.)
* Chopped fresh sage leaves, if desired

Preparation steps:

* Spray crockpot with cooking spray. In crockpot, place all ingredients except fresh sage; stir well.
* Cover and cook on low for 6 to 7 hours.
* Remove bay leaves prior to serving. Sprinkle individual servings with fresh sage, if desired.
