Cajun Style Country Ribs Crockpot Recipe



Ingredients needed:

* 2 cups of baby carrots
* 1 large onion, coarsely chopped
* 1 large green bell pepper, cut into 1-inch pieces
* 1 large red bell pepper, cut into 1-inch pieces
* 2 teaspoons of minced garlic
* 2 tablespoons of Cajun seasoning, divided
* 4 pounds of pork country-style ribs
* 1 can of stewed tomatoes, undrained
* 2 tablespoons of water
* 1 tablespoon of cornstarch
* Hot cooked rice

Preparation steps:

* Combine carrots, onion, bell peppers, garlic and 2 teaspoons of seasoning into crockpot. Mix well.
* Trim excess fat from the ribs. Cut into individual ribs; place in crockpot over vegetables. Pour tomatoes with juice over ribs.
* Cover and cook low for 7 hours.
* Remove the ribs and vegetables from cooking liquid to serving platter. Let liquid stand for about 5 minutes to allow fat to rise. Skim off fat. Blend water, cornstarch and remaining 1 teaspoons of seasoning until smooth. Stir into crockpot.
* Cook uncovered for another 25 minutes.
* Return ribs and vegetables to sauce; carefully stir to coat.
* Serve with rice and enjoy.
