Turkey and Cranberry Pot Pie Crockpot Recipe



Ingredients needed:

* 2 1/2 pounds of boneless, skinless turkey thighs, cut into 1 inch pieces
* Pie dough for a 9-inch piecrust
* 1/3 cup of flour
* 2 celery ribs, cut into thin slices
* 1 teaspoon of salt
* 1/4 teaspoon of black pepper
* 8 medium mushrooms, cut into thin slices
* 2 red-skin or golden potatoes, peeled and diced
* 1 1/2 cups of chicken broth
* 1/3 cup of dried cranberries
* 2 carrots, peeled and cut into thin slices
* 2 onions, chopped
* 2 to 3 tablespoons of vegetable oil, divided
* 2 teaspoons of poultry seasoning

Preparation steps:

* Mix the flour, salt, pepper and poultry seasoning in a large-sized mixing bowl. Add the turkey meat and toss until the pieces are thoroughly coated; pat off the excess flour and reserve the seasoned flour mixture.
* Heat 1 tablespoon of the oil in a large deep skillet over medium heat. Brown the turkey pieces in batches, about 2 minutes per side. Do not crowd the pan, and add more oil if the pan becomes dry. Transfer the browned turkey to crockpot as it is browned.
* Add the onions, carrots, celery, mushrooms, and potatoes and sauté until the vegetables lose their raw look, stirring often. This should take you approximately 4 minutes.
* Add the reserved flour mixture and stir until the vegetables are well coated. Add the chicken broth and heat to boiling, stirring consistently, until the sauce is slightly thickened. Transfer to the crockpot, add the dried cranberries, and stir to mix well.
* Cover and cook on high for 3 1/2 hours or on low for 7 hours.
* About 20 minutes before the above gets finished, preheat oven to 375 degrees.
* Roll the dough out on a lightly floured work surface.
* Remove the lid from the crockpot and dry it with a paper towel. Lay the lid on the dough and use it as a template to cut the dough in the shape of the lid. Roll up the edges of the dough all the way around so that the dough will fit neatly over the turkey stew.
* Remove the crock from the crockpot and lay the dough on top of the stew. Cut several slits in the middle of the crust and bake until browned, about 25 minutes.
