Creamy Chicken Manicotti Crockpot Recipe



Ingredients needed:

* 2 jars of Alfredo sauce (approximately 16 ounces each)
* 1 can of chicken broth
* 2 packages of grilled chicken breast strips, finely chopped.
* 1 1/4 cups of frozen petite peas, thawed
* 1 cup of ricotta cheese
* 4 ounces of cream cheese, softened
* 1/4 cup of refrigerated pesto sauce
* 1 box of dried manicotti pasta shells (8 ounce)
* Canola oil cooking spray
* 1 cup of shredded Italian cheese blend
* Chopped fresh flat-leaf parsley (optional)

Preparation steps:

* In a medium bowl, whisk together Alfredo sauce and chicken broth until smooth; set aside.
* In a second medium bowl, stir together chicken, peas, ricotta cheese, cream cheese, and pesto until combined. Fill dried manicotti shells with chicken mixture.
* Coat crockpot with cooking spray. Pour 1/3 of the Alfredo sauce into crockpot. Fit half of the filled shells in bottom of crockpot; top with another 1/3 of the Alfredo sauce. Sprinkle 1/2 cup of the cheese blend over top. Repeat with the remaining filled shells, the remaining 1/3 of the Alfredo sauce, and the remaining 1/2 cup of the cheese blend.
* Cover and cook on low for 3 hours.

(Sprinkle with some chopped parsley, if desired)
