Fruit Ambrosia With Dumplings Crockpot Recipe



Ingredients needed:

* 4 cups of fresh or frozen fruit. The fruit should be cut into bite-sized pieces.
* 1/2 cup plus 2 tablespoons of granulated sugar, divided
* 1/2 cup of warm apple or cran-apple juice
* 2 tablespoons of quick-cooking tapioca
* 1 cup of all-purpose flour
* 1 1/4 teaspoons of baking powder
* 1/4 teaspoon of salt
* 3 tablespoons of butter or margarine
* 1/2 cup of milk
* 1 large egg
* 2 tablespoons of light brown sugar, plus a little more for garnish
* Vanilla ice cream, whipped cream or fruity yogurt are optional

Preparation steps:

* Combine fruit, 1/2 cup of granulated sugar, juice and tapioca into crockpot. Cover and cook on low for 5 hours, or until thick sauce forms.
* Combine flour, 2 tablespoons granulated sugar, baking powder and salt in mixing bowl. Cut in butter using 2 knives until mixture resembles coarse crumbs. Stir together milk and egg in small bowl. Pour milk and egg mixture into flour mixture. Stir until soft dough forms.
* Turn crockpot to high. Drop dough by teaspoonfuls on top of fruit. Sprinkle dumplings with brown sugar. Cover. Cook 45 minutes or until toothpick inserted into dumplings comes out clean.
* Sprinkle dumplings with additional brown sugar. Serve warm and garnish with optional ingredients.
