Creamy Chicken Garden Soup Crockpot Recipe

Ingredients needed:

* 1/2 package of frozen pepper stir-fry vegetable mix
* 1 cup of frozen corn
* 1 medium zucchini, sliced
* 2 bone-in chicken thighs, sliced
* 1/2 teaspoon of minced garlic
* 1 can of fat-free chicken broth
* 1/2 teaspoon of dried thyme
* 2 ounces of uncooked egg noodles
* 1 cup of half-and-half
* 1/2 cup of frozen green peas, thawed
* 2 tablespoons of chopped parsley
* 2 tablespoons of butter
* 1 teaspoon of salt
* 1/2 teaspoon coarsely ground black pepper

Preparation steps:

* Coat crockpot with nonstick cooking spray. Place stir-fry vegetables, corn and zucchini in bottom. Add chicken, garlic, broth and thyme. Cover and cook on high for 4 hours. Remove chicken and set aside to cool.
* Add noodles to crockpot. Cover and cook for 20 minutes longer.
* Debone and chop chicken. Return to crockpot. Stir in remaining ingredients.

Serve and Enjoy
