Roast Beef Burrito Crockpot Recipe



Ingredients needed:

* 1 bottom round roast (approximately 3 to 5 pounds)
* 1/4 cup of water
* 1 teaspoon of garlic powder
* 1 teaspoon of black pepper
* 1 bay leaf
* 2 jars of salsa
* 2 cans of diced green chiles, undrained
* 1/2 large yellow onion, sliced
* 8 burrito-size flour tortillas
* 1 cup of shredded Cheddar cheese

Preparation steps:

* Place roast into crockpot; add water. Season with garlic powder and pepper to taste. Add bay leaf. Cover; cook on high for 6 hours. Remove bay leaf and discard
* Transfer beef to cutting board. Trim fat from beef and discard. Shred beef with two forks. Let cooking liquid stand for about 5 minutes to allow fat to rise. Skim off fat and discard. Add shredded beef, salsa, chiles and onion to cooking liquid in crockpot; stir to combine. Cover; cook on high for 1 hour.
* To serve, place about 3 tablespoons beef onto each tortilla. Top with cheese and fold into burritos. Place burrito, seam-side down, on plate. Microwave 30 seconds to melt cheese.

Optional toppings could be sour cream or ranch dressing. I love mine with ranch.
