Black-Eyed Peas and Greens Crockpot Recipe
Ingredients needed:
* 1 bag of dried black-eyed peas (16 oz.), sorted and rinsed
* 4 cups of chicken broth
* 2 cups of diced cooked ham
* 1 cup of water
* 1/2 teaspoon of salt
* 1/4 teaspoon of ground red pepper (cayenne)
* 3 cloves of garlic, finely chopped
* 2 medium carrots, chopped (1/2 cup)
* 2 sprigs of fresh thyme (4-inch)
* 1 large onion, chopped (1 cup)
* 1 jalapeno chile, seeded and chopped
* 5 cups of torn escarole or kale
* Red pepper sauce, if desired
Preparation steps:
* Spray crockpot with cooking spray. In crockpot, mix all ingredients except escarole and pepper sauce.
* Cover and cook on low for 8 hours or until peas are tender.
* Stir in escarole.
* Cover and cook for 1 hour longer or until escarole is wilted and tender.
Serve with pepper sauce and enjoy
