Mexican Cornbread Pudding Crockpot Recipe
Ingredients needed:
* 1 can of cream-style corn (14 3/4 ounces)
* 2 eggs
* 1 can of diced mild green chiles (4 ounces)
* 2 tablespoons of vegetable oil
* 3/4 cup of yellow cornmeal
* 2 tablespoons of sugar
* 2 teaspoons of baking powder
* 3/4 teaspoon of salt
* 1/2 cup of shredded Cheddar cheese
Preparation steps:
* Coat crockpot with nonstick cooking spray.
* Combine corn, eggs, chiles, oil, cornmeal, sugar, baking powder and salt in medium bowl. Stir well to blend.
* Pour into crockpot. Cover and cook on low for 2 hours or until center is set.
* Sprinkle cheese over top. Cover and let stand for 5 minutes or until cheese is melted.
